Smoked Salmon and Veggie Whole Wheat Pasta
with Laughing Cow Cheese, Parmesan, Capers and Dill
OH MY GOSH this lunch was sooooooooooo good!! If you like smoked salmon, you have to try it!
I thought up this recipe last night when I was thinking of what we had in the fridge to use up. It started with smoked salmon, celery and green pepper, but I wasn’t in the mood for a sandwich (since I had a stove top available!) so pasta it was. I LOVED the macaroni shape for this (long noodles would have been gone too quickly) and the cheese, 1 Laughing Cow wedge, melted, and freshly grated parmesan, made the perfect addition. I also stirred in a tbsp of capers and topped with some dried dill.
It was pretty salty, but I can handle that every now and then. If you don’t like smoked salmon, you could use the salmon or tuna pouches.
On the side I had 4 oz of apple slices and 1/2 a serving of Kashi crackers. I probably didn’t need the crackers since I had 2 oz of grains already, but of course I ate them once they were in front of me 🙂

I can’t wait until school starts and I can eat one lunch a week (Fridays) at home and cook up something warm. I love my packed lunches, but I’m jealous of people who get to eat at home everyday. There are so many more options.
I am perfectly full now and am headed down to South Carolina to get my books and student ID, that is if they are still open! I hope to do some walking and will take my tennis shoes with me.
