Kelsey and I started the day a little too early for our summer schedules: 7:30! We had plans to meet in the living room for a yoga class We did 30 minutes of Power Vinyasa #1 from YogaDownload. Short and sweet. I’ve missed yoga, but I’m finding my attention span for it has waned. We just made plans to go to one of the studios from our yoga retreat now that we have more time.
After yoga, Kelsey made me this da-licious french toast!!!
She bought this loaf from Heather’s Artisan Bakery in Columbia, SC. Can we say DOUGHY!?
She sliced the bread and soaked it in an egg, milk, vanilla, salt, cinnamon, nutmeg mixture for about 5 minutes per side. (See Bites + Bowls later today for more info!)
Probably the best French toast I’ve ever had!! We smothered it in a little of Naturally Nutty’s newest flavor: Chocolate Vanilla Almond Butter, which I was sent to try out, and a few Cranberry Pecans from OhNuts.com.
This stuff is AMAZING!!!!!!!
Kelsey also caramelized some grapefruit slices in a dry pan with brown sugar. It made the fruit all plump and sweet – yum!
Lastly, a little bit of pear + blackberry in flax.
I made Cappuccino Fudge coffee
And thanks to Kelsey for doing the dishes for dinner and breakfast!!! She’s so cool
We’ve got another gray day here But that sounds like a good day to read!

Carmelizing grapefruit sounds devine. I bet it really cuts down on the tartness and brings out the fruit’s natural sugars, yum. And your comments about the flexibility in an R.D.’s lifestyle really resonate with me. I’ve been thinking about going back to school for my R.D. or a masters in public health and I love reading about your classes and projects!

Ok. This is the most beautiful, luscious, decadent but healthy breakfast ever! I need to have friends who make brunches like this. I haven’t had a sleepover in forever! You and Kelsey are adorable with your yoga date in the morning, too.

Delicious! OOH a yoga retreat sounds fabulous – I definitely prefer classes in an actual studio as opposed to at home. It makes such a difference for me!

I usually add a quarter cup. I add them raw, which makes the smoothie taste doughy. I don’t think it changes the texture very much. You can add cooked oatmeal too, which is awesome but more work.

wow….can i say just how jealous i am??? That really is the most amazing looking french toast ever! Especially since it came from that beautiful loaf of bread!!! I can’t imagine how tasty it is to put vanilla almond butter on french toast. Yummmm!!!
