Finally, Nutrition

Finally we’re learning all about nutrition!! I still can’t believe that foodservice gets equal weight on the RD exam to the clinical topics. Craziness.

We just broke for lunch at 11:15 and boy was I ready to eat!!

I packed my leftover salad with extra sun-dried tomatoes, leftover grilled tofu and some almonds. Plus a thing of sesame dressing.

Next up: a slice of Flax Oat Bran for brain food :)

A blood orange donated by Lauri

Fresh ‘n filling

I’ve been sipping on this Herbal Water Lemon Verbana Geranium. Love the flava!! Rosey and herbalicious.

Lauri also shared a bite of her endive with chicken salad. Yum!

Gotta finish typing so I can eat!!

Those endives are such an interesting variation on a lettuce wrap. I’m going to have to try that! Good luck with the rest of class… I feel ya on the somewhat tangential info school makes us learn… but just keep on keeping on… it’ll all be worth it! Good luck!

That endive salad looks so delicious and gourmet, considering it’s a packed lunch I’m impressed by that presentation. Your lunch is incredibly fresh and balanced looking, per usual. I love blood oranges! Have fun delving into the complexities of nutrition. :)

Hi, your lunch does look really delicious and nutritious.
I recently saw you on current t.v and was amazed by how easy you make it to eat and live a healthy lifestyle. I’m a college freshman trying/starting to manage a healthy lifestyle while in college, you’ve inspired me to do just that.
Thanks

Entertainment Weekly said that Herbal Water was in and Kaballah water was out, so you are right on track. And yes, they are my #1 news source.

Sometimes simple salads are the best tasting ones! The bread looks so chewy!

15 Michelle March 16, 2010 at 11:57 am

I totally agree with being baffled that food service is equally as important as nutrition on the RD exam. I haven’t taken it yet (still an undergrad) but they mention it a lot.

I’ve never had the opportunity to try blood oranges- wonder if I’d like them? Dhow are they different from navels?

Reply

21 Kath March 16, 2010 at 3:55 pm

I don’t really care for them actually. Navels are good, tangelos rock!

I think blood oranges are so much better than normal ones…but that could be all in my head. Question about the herbal waters – do you promise they don’t taste like perfume?? When I hear “rosey” all I think is perfume/potpurri :0).

Reply

32 Kath March 16, 2010 at 3:56 pm

Haha. No, they don’t have that strong perfume flavor. But of all the flavors, this one was the most perfumey. Try the orange one!!

the endives look good but not very filling! i would take your bread and salad any day. and blood orange!!!

is it possible to eat too much fruit? i usually have between 3 and 4 pieces a day, but i noticed you seem to only have 1.5 to 2……is there a reason? i guess this comment is buried down pretty far so you probably won’t see it. ah well, maybe someone else can answer?

Reply

44 Kath March 16, 2010 at 3:57 pm

No reason. I think your serving size is totally up to you and your lifestyle.

Meant to post this question yesterday…wondering your opinion of Vega Bars vs. Amazing Grass bars? Taste, nutrition, etc? I have tried amazing grass (thought it was ok) but not vega.

Reply

47 Kath March 16, 2010 at 8:09 pm

Bar for bar, I’d go with Vega. The AG don’t have quite as odd of a taste, but the Vega bars have the best texture and a petter nutrition profile (more PRO and fiber and less sugar).

Oh this looks good.

I looked at a practice RD exam one and was shocked at how little questions were about nutrition! That is part of why I decided to not get it… I just can’t learn more things that I don’t care about! haha

I know, that is so crazy about the RD exam! It is so frustrating too. I have my review session in a month however I still have another year to go, oh boy.
