Jill,
Woman’s World had put out a request for weight loss stories so I sent in mine with some photos. Then I got a call that they wanted me to fly to NYC for the covershoot. I really thought it was a scam until they send me flight info and all the details. I asked if the husband could come too (why not just ask!?) and they said yes! It was an amazing 24 hours trip!

kath,
I asked this already a while back but i completely forgot where i posted it and could never find the answer! SO here it is again. I made okra from being frozen (steamed it) and it came out slimmmyyy....it was disappointing because it felt like it was slithering around in my mouth...Is your Okra slimy and if not do you know why mine might have been? Thanks!

Val ,
I totally agree with you about the food scales!! It's SO much easier to weigh out ice cream than use a measuring cup. And since it's calorie-dense, I'd like to be sure I'm getting an accurate portion, so it's not a time when I trust my eyeball. I would trust your scale over your measuring cup for an accurate portion - I've read that measuring cups can be off by 25-30%!

Karen ,
But I hate to dirty up a different glass at each meal!! I'll try to keep it out of sight - or use glass with the "fancier" meals. But like I said earlier this week, I hate drinking water out of glass!

Angelcubbie ,
Glad you liked the loaf! I have mine wrapped in aluminum foil at room temp. Since it's my first loaf I don't know how long or well it'll last like that, but I don't want it to be chilled.

Jill ,
Yup, I was on the cover of the Jan. 2007 Woman's World. Flown to NYC and everything. Kind of hard to believe it really happened. It's kind of embarrassing though because I don't look like myself at all and it's ...Women's World. I did it for the free trip to NYC

Nikki ,
Start with recipes - browse blogs, magazines and sites like www.myrecipes.com and start by making a meal plan so you'll have all the ingredients and following the recipe. Once you've done this a while you'll get more confident to experiment with techniques and flavors on your own. But there are SO many good recipes out there that sometimes I forget that they can be better than my experimenting. I'm going through a "recipe phase" right now where I"m using more....and in a few weeks I'll probably go through another "throw together" phase. But they are your best learning tool!

Hey Kelly T, if you're out there, I don't think I completely answered your calcium question the other day. Sorry about that, I was kind of in a rush to get out of the office and on the road for the weekend...You asked about what supplements I would recommend...Basically, if you are not getting 3-5 servings of dairy and/or soy/ calcium fortified cereals/granola bars, etc per day, but you are still getting in at least 2, you only probably need to take 1 500mg tablet with your dinner or with a meal that you're not having much if any dairy at to ensure you're hitting the 1200-1500mg per day mark. I think it was twinks who said she was trying to take 3-4 pills of supplementation per day and had a lot of side effects; I only recommend people taking THAT much supplementation if they do NOT get in any dairy or calcium fortified foods each day. The only people I usually see falling this short are some of my elderly patients who live on soup, crackers, and coffee with cookies! So don't feel you have to push supplements all day long if you have a wide variety and well rounded diet...that way you can avoid some of the side effects of taking lots of calcium pills (ie bloating, gas, constipation)....
If you DO need a supplement, the ones I like best are the Viactiv chews that also have vitamin D in them (the vitamin D helps you absorb the calcium) or the Caltrate supplements. Both are chewable; I just prefer them because I can't swallow horse pills, but you can take any regular 500mg calcium supplement out there that you want for the most part, you just should have some vitamin D added in with it to help w/ absorption as well.
I have been reading a great book this weekend written by Liz Applegate, a renowned nutrition who also works with the Olympic teams/athletes. I think her book is called "Play Hard Eat Right" or something similar. She had an interesting blurb in the book about supplementation and over-doing vitamins. She actually recommended skipping the multivitamin on days where you eat fortified cereals or have one of the many energy bars out there, just because there are already so many nutrients in these, if you add a MVI on top you can actually over-dose on vitamins! I did not know this. So if you also eat a well rounded diet with lots of fortified foods, you don't necessarily need to take a vitamin each day. Vitamins are better for people like vegetarians, pregnant women, and women on low cal diets, to help cover for any nutrients they might be missing. Just an extra FYI

Kath! You are so creative! If I was that good I'd never have to eat a Lean Cuisine again!

How did you start/get interested in cooking? Did you kind of pick up the basics from family members? I really want to be able to make things for myself, but I don't know where to start.

Enjoy the rest of your weekend!

(I guess I'm Jill #2!) Anyway, thanks to everyone who responded to Kim, I also have been going "downhill" with the whole food intake and was really beating myself up over it - to the point that I felt bad when I felt as though I had had too many WALNUTS because of the rest of my diet was high fat. It's so nice to hear such sweet comments from people, even if it's not directed to me.

Kath, I had a lime dressing at Panera while ago and it was AMAZING. I brought some home but am running low, what is your recipe?
