<p>Just another manic Monday, right?</p>
<h2>Mud On The Tires</h2>
<p>I got STUCK in a FIELD OF MUD today!!!!!!!! The parking lot was full so Amy and I parked in the field behind our office building. Bad idea. When I tried to leave my tires started spinning. I was able to back up some and tried to go forward again &#8211; more spinning!!! I really thought I was doomed. But we realized that luckily I was on a slight hill and I was able to back up and drive the perimeter of the field BACKWARDS (I didn&#8217;t want to lose momentum!) and made it to the parking lot. WHEW!</p>

<p>I ate a homemade granoler bar and some almonds on my way home. This is a reenactment because I couldn&#8217;t photograph and drive!</p>

<p>My legs actually feel GREAT today. My foot, however, is quite sore <img src='http://www.KathEats.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' />  I iced it at work in a chair with some ice from our ice machine and took some IB profin. Going to take the running easy this week&#8230;I&#8217;m nervous. </p>
<p>Since I got home before sunset tonight and have a CDA meeting tomorrow night, I decided to do a light workout tonight and swap my rest day for tomorrow. I mentally (and physically with my snack) prepared for the gym on my ride home and went over for some ellipticalling and a round of solid upper body weight lifting. </p>
<p>Made it home just in time for another of Matt&#8217;s Famous Soups!!!</p>

<p>He invented it <img src='http://www.KathEats.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<h2>Ingredients</h2>
<ul>
<li>.75 lb organic Smart Chicken, cut into cubes</li>
<li>1 carrot</li>
<li>1 celery </li>
<li>3 cloves garlic</li>
<li>3 cups chicken broth</li>
<li>1 cup Lundburg Short Grain Brown Rice (the BEST!)</li>
<li>1 can peas, mostly drained</li>
<li>Rosemary + thyme from the garden</li>
<li>Salt + pepper to taste</li>
</ul>
<p>Cook chopped celery and carrot in canola oil. Then add chicken and garlic and brown. Then add stock and remaining ingredients and simmer for about 45-60 minutes until rice is done. </p>
<p>Totally forgot how much I love peas!! I picked up this can from TJ&#8217;s on a whim once and they were the perfect addition to the soup. </p>

<p>I had a steady build of hunger that peaked at 11:30 when we all broke for lunch. </p>
<p>I brought in Super Bowl leftovers &#8211; Kate&#8217;s salad that she sent home with me!! It had feta, spinach, tomatoes and croutons and I added 3 of Kelsey&#8217;s goat cheese balls and some almonds. </p>
<p>Plus pineapple wedges from the cafeteria of North Ellie! &#8216;TWas a big, fun salad!</p>

<p>These <a href="http://www.organicvalley.coop/" target="_blank" onclick="pageTracker._trackPageview('/outgoing/www.organicvalley.coop/?referer=');">Organic Valley</a> cheeses arrived on my doorstep this past week and I knew they would be perrrrrrrfect for pimento cheese for the Super Bowl! I had a taste of each while I prepped and they were delish. I love sharp white cheddar! </p>

<p>The run was pretty easy. I&#8217;m really amazed at how easy it has been to add more miles to my running. I think it helps that I have a fun partner to chat it up with and we&#8217;ve got the wonderful (long) greenway to run on so there&#8217;s no distracting cars or roads to cross (and minimal hills!!)</p>
<p>The greenway had apparently majorly flooded because there was icky, sticky mud EVERYWHERE!!!</p>

<p>We had to stop and tip-toe through it many times throughout the run, which meant our pace was not accurate. We decided early on not to worry about pace at all and just to enjoy the miles.</p>
<p>Here are the stats regardless. It&#8217;s pretty clear which miles had lots of mud and which were dry!</p>

<p>I decided that 9 miles &#8211; approaching 80 minutes of running &#8211; was time to add in some fuel in addition to breakfast. I&#8217;m not one for goos or gels &#8211; real food should do just fine. I brought a box of raisins in my pocket and popped a few just before the run started.</p>

<p>I didn&#8217;t end up needing anymore because Casey, <a href="http://emilyholcombe.blogspot.com/" target="_blank" onclick="pageTracker._trackPageview('/outgoing/emilyholcombe.blogspot.com/?referer=');">Emily</a>&#8217;s husband, planted a water bottle with a homemade sport mix at the 3 mile marker so on our return trip (about 6 miles in) we could rehydrate and get a boost of sugar + salt (and lemon juice). I don&#8217;t know his recipe &#8211; go hound <a href="http://emilyholcombe.blogspot.com/" target="_blank" onclick="pageTracker._trackPageview('/outgoing/emilyholcombe.blogspot.com/?referer=');">Emily</a> for it on her blog! I need to get it! It was hard to tell if the water + sugar gave us a boost, but I like to think it did. It was like homemade lemonade and tasted AMAZING 6 miles in! Brendan Brazier also has some homemade sports drink recipes in <em><a href="http://www.brendanbrazier.com/book/index.html" target="_blank" onclick="pageTracker._trackPageview('/outgoing/www.brendanbrazier.com/book/index.html?referer=');">Thrive</a></em> (which I am currently reading) and even some gels that if I ever feel like I need them I will try out.</p>
<p>Remember when I ran 8 miles and felt pretty icky all afternoon? So far I feel much better right now. But my legs are definitely feeling it!</p>
<p>Last time I ate a big salad upon return. Today I took Brendan&#8217;s advice and recovered with a smoothie &#8211; a blended salad if you will. He says (and I think Dr. Fuhrman says too) that blending up vegetables (and foods in general) makes them easier to absorb and a quicker, more effective recovery. Just so you don&#8217;t think I believe everything I hear, this follows what I learned about the GI tract in physiology as well. And since I love <a href="http://www.katheats.com/siab/" target="_blank">SIAB</a>&#8217;s, I have no problem putting them on my recovery day menus <img src='http://www.KathEats.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>And WOW &#8211; we both loved it!!! Matt said: &#8220;It has a depth of flavor that no other canned soup I have ever tasted has.&#8221; I agreed &#8211; it was THICK, which I loved, and did not have an oniony, tin-can taste!!  The only con is it&#8217;s pretty calorie dense &#8211; nearly 500 for a can (and I could easily eat a whole can!) But taste-wise, highly recommended.</p>

			<content:encoded><![CDATA[<p></p><p>Finally starting to feel the effects of working full time &#8211; in a GOOD way: free weekends!!!! This might be the first time in AGES that I haven&#8217;t had work to do on the weekends. I&#8217;m caught up on my freelance work, the blog is being written as I type (hee hee) and our house is super clean and organized and ready for sale!</p>
<p>It was nice to watch two episodes of <em>House Hunters</em> and have the only tasks on my agenda include a run, a grocery store trip, a bit of food preparation and a party!</p>
<p>I set my alarm for 6:26 this morning so I&#8217;d have plenty of time to digest breakfast before my 11AM run with <a href="http://emilyholcombe.blogspot.com/" target="_blank" onclick="pageTracker._trackPageview('/outgoing/emilyholcombe.blogspot.com/?referer=');">Emily</a>. Often I sleep late, eat late and then am too sloshy to run before lunch!</p>
<p>Plus <img src="https://mail.google.com/mail/e/B60" /><font color="#ff0080" size="4">6:26<img src="https://mail.google.com/mail/e/B60" /></font> is a fun time to wake <img src='http://www.KathEats.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  </p>

<p>I did like the subtle apple cinnamony flavor a lot <img src='http://www.KathEats.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  This would be even better with big chunks of apples mixed in. </p>
<p>Honestly it wasn&#8217;t all that filling because the volume was less than soupy oats. Hoping it&#8217;s one of those quality over quantity things and I still have enough energy and satiety&#8230;&#160; Next time I might cook oats and mix in 1-2 tbsp of the apple cinnamon hot cereal to fill in the oat gaps. </p>

We don&#8217;t go out on solo dates very often because we always have fun friends to play with, but we decided when <a href="http://www.katheats.com/kerf-vs-food/" target="_blank">we went out for my birthday</a> that we would try to do one fun dinner out together per month (although I&#8217;m not sure we&#8217;ve been out together solo since!?!). We are in our element at a restaurant ooging over the food!</p>
<p>Let&#8217;s go to the movies!! We just started to get hungry before it was time to leave for our movie so we packed up a lunch to eat in the theater:</p>

<p>It was a little hard to fumble through in the dark, but we started eating during the previews so it was gone soon enough to concentrate on the movie.</p>

<p>After reading so much good feedback about AVATAR we wanted to see it 3D in the theaters. We both agreed that we were a little disappointed. </p>
<p><strong>Good:</strong></p>
<ul>
<li>The 3D was really cool &#8211; and guessing by the previews it&#8217;s now the mainstream way to watch movies!</li>
<li>I LOVE fantastical lands and I thought they did a FABULOUS job with the land of Pandora. So many clever and intrigue details.</li>
<li>Similarly, the special effects, computer effects and basically all effects were awesome</li>
</ul>
<p><strong>Bad:</strong></p>
<ul>
<li>The plot was soooo predictable and rather dull. I don&#8217;t to spoil the ending or anything, but the fighting scenes really dragged on towards the end just as all movies with fighting scenes do (the reason I hate most fighting and sports movies)</li>
<li>I dislike movies with machine guns in them. I do not like watching violence at all!</li>
<li>The characters were pretty flat (IMO) and the dialogue wasn&#8217;t very clever</li>
</ul>
<p>So that&#8217;s my feedback!!</p>
<p>We actually conveniently watched the movie next to Caitlin + Jason, who were going to see the same show!!</p>
<p>3D glasses are the new style.&#160; Obviously. </p>

We had a GIFT CARD that Larbs + Matt gave us for Christmas!!!!!!!</p>

<p>Both of us didn&#8217;t feel like going <em>all out</em> tonight (= alcohol on both sides, entrees, etc) We just wanted to enjoy a nice dinner prepared by someone else that would still be the amount we would eat at home. So we decided to order lightly and share most of the meal and it turned out to be one fabulous dinner!</p>

<p>I do not really care for panna cotta but this was AWESOME. The texture was indeed slightly marshmallowy &#8211; thicker than usual slimy panna cotta. And the vanilla flavor was spot on fresh.</p>

<p>We loved our cozy booth and sat side by side and I had plenty of room for my camera bag and we could see the restaurant. <p>I bounded out of bed. I guess because it&#8217;s like going from bed to getting a massage?!</p>
<p>I also decided that I just love yoga because it reminds me of dance. Today&#8217;s class was <a href="http://www.y2yoga.com/schedule/" target="_blank" onclick="pageTracker._trackPageview('/outgoing/www.y2yoga.com/schedule/?referer=');">Super Flow</a>. After a year of practicing yoga, I have finally found my match made in heaven. This class is awesome because we start with a warm-up and then do a &quot;routine&quot; 3 times through. So by the third time you know all the poses and it&#8217;s kind of like learning a dance routine. I love the transition between the poses &#8211; it&#8217;s like ballet! And one of my favorite poses is dancer <img src='http://www.KathEats.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I wore my hair in a bun to be like a ballerina! </p>

<p>Before I left I had a homemade granola bar with a knife-schmear of Naturally Nutty Cinnamon Sunflower butter</p>

<p>Yoga rocked. <a href="http://www.y2yoga.com/teachers/tanner-bazemore/#tanner-bazemore" target="_blank" onclick="pageTracker._trackPageview('/outgoing/www.y2yoga.com/teachers/tanner-bazemore/_tanner-bazemore?referer=');">Tanner</a> is awesome and we had the best music. Lots of <a href="http://www.djearworm.com/" target="_blank" onclick="pageTracker._trackPageview('/outgoing/www.djearworm.com/?referer=');">DJ Earworm</a> mashups!! He has the best taste in music. Eclectic stuff that I love (Oasis, pop, <em>Hallelujah</em>, <em>Falling Slowly</em>).</p>
<p>I came home and got ready for a <font color="#8000ff" size="5">Girls Oatmeal Brunch</font>!!</p>

<p>I&#8217;ve found there are two keys to going to the gym on a weeknight: </p>
<p>1) Don&#8217;t be hungry</p>
<p>2) Mentally prepare. Mentally prepare. Mentally prepare. Mentally prepare. Mentally prepare. Mentally prepare.</p>
<p>I was very mentally prepared tonight! And actually excited to go. It was the indoor playground mentality. </p>
<p>I was in and out of the house in 10 minutes in my workout clothes and drove there. I stuck to cardio since I&#8217;m going to yoga in the AM and did 30 minutes of Stairmaster climbing and 15 on the elliptical then headed right home to make dinner. I was quite hungry when I got there!! I have my half marathon plan in a pretty format and it says I&#8217;m supposed to run 3x a week. Honestly, that&#8217;s quite hard!! Running really exhausts my legs and I really like moving them in different ways with cross training. So I&#8217;m just going to play it by ear, running at the very least twice a week, but still working my body on the other days (plus a day for yoga and a day for rest). </p>

<p>I&#8217;ve been listening to these podcasts by <a href="http://drfuhrman.com" target="_blank" onclick="pageTracker._trackPageview('/outgoing/drfuhrman.com?referer=');">Dr. Furhman</a>, an MD with a nutrition specialty on my commutes. I downloaded a bunch of nutrition podcasts and his was the first I listened to. When I hear he and Dr. Oz are friends and went to med school together my ears perked up. I love Dr. Oz! Much like <em>Sex and the City</em> was in its 5th season before I ever watched an episode, I can&#8217;t believe I&#8217;ve never heard of Dr. Furhman or his book, <a href="http://www.amazon.com/Eat-Live-Revolutionary-Formula-Sustained/dp/0316829455" target="_blank" onclick="pageTracker._trackPageview('/outgoing/www.amazon.com/Eat-Live-Revolutionary-Formula-Sustained/dp/0316829455?referer=');">Eat To Live</a><em>. </em>I REALLY like what he has to say. He&#8217;s viewpoint is all about <font color="#400080" size="5">nutrient density</font>. </p>
<p>He says:</p>
<p><strong>H = N / C</strong> or <strong>Health = Nutrients / Calories</strong></p>
<p>Based on gobloads of research, we KNOW that fruits, vegetables, nuts and seeds, beans and basically all things plants are hella good for us. There&#8217;s really no arguing with that. *Lightbulb!* He also says that we know that plants are high in discovered vitamins and minerals. And they are also high in phytochemicals &#8211; and likely thousands of other undiscovered micronutrients. *Lightbulb* He also talks about toxic hunger and says that if we are eating foods void of these micronutrients (while they may be high in <em>macro</em>nutrients = CHO, PRO + FAT), then our bodies will always want to eat MORE because they are craving the micronutrients we aren&#8217;t getting from animal proteins, refined carbs, processed foods. He also discusses how taste buds can change to actually prefer super healthy foods. I totally agree on that one. Give me a big salad with nuts and seeds over fast food any day. </p>
<p>But it sounds kinda mythical huh? </p>
<p>If it weren&#8217;t for the Dr. Oz friendship I might be a lot more skeptical. But the more I tried to find disagreement with him, the more I realized &#8211; well you really <em>can&#8217;t argue with vegetables!!</em> He doesn&#8217;t advocate an entirely vegan diet, and says so long as you are eating mostly plants you can have some animal products scattered in. </p>
<p>I do want to know what he has to say about <strong>iron</strong>, <strong>omega-3s, B12</strong> and <strong>athletes</strong>. He is not a proponent of grains, even whole wheat, because he says it is not very nutrient dense, which I somewhat agree with. I&#8217;d like to sit down and have a solid conversation with him! But he has me totally hooked on NUTRIENT DENSITY! I&#8217;ve been thinking about this for a few weeks now &#8211; what a great concept!!</p>
<p>What the Superfoods book was to me in 2007, this is to me now. I&#8217;ve been eating trying to eat more nutrients and it&#8217;s been really motivating and even fun. And there&#8217;s no doubt that I have lost most of my 2009 Fun Weight (although I don&#8217;t weigh myself so I don&#8217;t really know how much or anything). But I feel great! </p>
<p>I think I&#8217;m going to read his book next. Search for &quot;Nutritional Wisdom&quot; on iTunes for the podcasts. I recommend &quot;Nobody Should Die Of Heart Disease&quot; (the first half), &quot;The Secret Weapons for Permanent Weight Loss,&quot; and &quot;Food Addictions: The Cause of Obesity.&quot;</p>
<p>SOOOOOOO&#8230;&#8230;.</p>
<p>He is always talking about these blended sauces made with nuts and things. So I wanted to make one tonight!!</p>
<p>I gathered up some ingredients that were in my fridge to assemble a sauce of sweet potato puree (1/3 a cup), juice pulp of kale and lemon (1/3 a cup), coconut milk (1/3 a cup), parmesan cheese (2 tbsp) and ALMONDS (1/4 a cup). Although I really didn&#8217;t measure &#8211; just eyeballed it all. Guys, I have come SO FAR from the days of measuring food!!! I used to measure <u>everything</u> and would have never (ever) made a sauce with &quot;high calorie nuts&quot; but the more I learn about nutrition and the more I experiment with my body, the more I believe in QUALITY over QUANTITY!</p>

It sure is an expensive item, so put it on your birthday wish list, your Christmas list, your Valentine&#8217;s list. If you like blended things, it&#8217;s definitely worth the price. </p>

<p>What a great concept. The herbal water made such a fun treat to plain water!! I am not the <em>biggest</em> orange fan, but I did like this flavor a lot.</p>

<p>We &#8220;ordered in&#8221; from the elementary school just down the street. They had some allstars on the line today: sweet potatoes baked with cinnamon and sugar, fresh pineapple and a big green salad. I drizzled the salad in a little olive oil packet from Subway. </p>

<p>Last on my plate was Dannon greek yogurt! I found it at Harris Teeter and since i&#8217;m on a sampling rampage this week put it in my cart to try. Unlike Yoplait, this guy was great. Almost identical to Oikos in nutr stats, texture and flavor (but lacking the awesome company behind the label!) </p>

<p>Lunch was awesome and filling!</p>
<p>Brought from the cafeteria were some Breakfast Cookies leftover from&#8230; breakfast! These are whole grain and high fiber. Definitely an improvement from sugary cereal or biscuits. But still not totally low in sugar, and the added fiber apparently is rather&#8230; rough on system of the Child Nutr Dept staff <img src='http://www.KathEats.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I broke off a bite to taste. Not bad! It was too sweet for my palate but I&#8217;m sure the kids love them.</p>
