Kath - I just made this recipe by using your idea but substituting with items I had on hand. SO GOOD! This, along with your vegetable lasagna are some of the best recipes I have tried. Keep em coming! :)

Thanks for the response. I made this adding ground turkey that had been browned (just using up leftovers!) and corn. Minus the jalapenos and it was super good- all 8 of the kids liked/loved it!

Thanks for another great recipe!

julie ,
I have used amaranth a few times - you can search KERF to try to find those recipes. I do not know what the nutritional differences are between the two, but I'm sure you can find out online.

Hi there. Do you ever use Amarenth grain in any recipes you make? do you know if they have more fiber or nutrients than bulgar?

Liz,
It's been a long time since I ate this, but I did a rough estimate of the nutritional info. and came up with 840 kcal. for the whole recipe, which is about 420 a person. Not sure where the discrepancy is - are you using 1.5 cups of cooked pinto beans and a whole can of diced tomatoes?

I just made this recipe, but when i calculated the nutrional info I am only getting around 310 calories for 2 pepper halves (I did switch the bulgur for whole wheat couscous and used pepperjack instead of muenster). How did you come up with 430 kcal?
