Hi Kath,
I'm a new reader, and I just had to comment on how much I love this recipe! My husband and I put a peanut butter type sauce on top, and it keeps us full for hours! Thank you!

You are an excellent chef! Why are you sorry that your left handed? There's nothing wrong with it. . . I hope it's the natural unsalted peanut butter you were talking about ! do you think this recipe would be good with raisins?

Just discovered your blog this past week and this is the second recipe I've made and loved it! To be honest I got burnt out on bananas and oatmeal when I was about 10. I just ate them so much I started to dislike them. So I was shocked at how much I enjoyed these pancakes! I blended the oatmeal, eggs, nutmeg, cinnamon, and baking powder to make it less oatmealy. Then I stirred the banana in and whisked it all together to amp up the fluff. It worked great. My pancakes were as fluffy as the real thing! I topped with honey and sliced bananas. Thanks for turning me back on to oatmeal and bananas! :-)

For egg white sub use 1 tbls agar powder (not flakes) dissolved in 1 tbls water.

YOu can find agar powder in the natural/whole foods section f the grocery store. Most likely at whole foods. I found mine at the Indian store.

Thanks, Kath. I woke up this morning and thought "Oatmeal pancake" and the magic Google oracle brought me here. I used a full egg and forgot the cinnamon, but had the half banana and the result was delightful. Thanks for the great breakfast(s) - I'll come back to this one again and again.

i make a similiar pancake using 1/3c oats, 1/3c eggwhites (2) 1/3c fat free cottage cheese 1/2tsp baking powder. I use a mini chopper. it comes out huge and delicious! I top with a little agave or honey or maple syrup and half a sliced banana.
also works nicely w/ 1/4c oats, 1/4 c whites 1/4 cottage cheese and 1/4tsp baking powder
