I finally got some kale with the intentions of steaming it and making kale chips. Made the chips tonight and they were great! I added a little too much salt, so a little less next time. I told my 8 year old what I was making and when she tried them she told me you would have to be crazy not to like them! I have some extra kale, so another night this week I'll try them again. Great idea... and I love all the recipes you have... I have tried so many in my endeavors to get healthy, and it has certainly worked. Thanks for all you do!

I just made kale chips. Va-va-voom!! I'm a Weight Watcher and just emailed the recipe to my WW buddies. I think the next time I make them, I will try olive oil spray. I'll use less oil and get a better distribution on the leaves. I grated Asiago cheese and sprinkled with kosher salt. I think I left them longer than 15 minutes because they're pretty dark. However, they are also very crunchy, just like potato chips. I try to incorporate kale into my diet as it is so chock full of nutrients but it has a strong flavor, not conducive to eating all the time. You can bet I'll be eating kale a lot more often now! Thank you!

Hi Kath,
I'm wondering if you have tried MaraNatha Choc. almond butter? (they call it spread, I guess because it has evaporated cane juice and oil added). I live in Ashland Or where its made. If you can't find it I'd be happy to send you a jar :)
I'm also wondering if you have tried oat bran in your oat pancakes. More protein and fiber for less cals.

Wow, I have to say that these really surprised me! I only did olive oil and salt on mine and shockingly, they are very similar in taste to potato chips. I expected to like them, but I thought the "potato chip" claim I've been hearing all over the place was a bit exaggerated! What a great way to get your greens!
