Welcome Amy! Spinach will work, but it wilts down way more than kale so I would use regular instead of baby spinach and steam it very lightly so it holds some shape

Hi Kath,
I just happened upon your site the other day... and i think its made me want to start cooking again:) I am a college student and like to have things i can either make ahead (slow cooker) or things i can make quickly and rather cheaply but healthy. I think your site seems to have a good balance.. my question is I dont have Kale, But i do have spinach, would that work?
Thanks!

Hi Kath, love your site. Would this recipe work with regular bbq sauce, or would that not mix well with the cranberries?

This looks awesome! So am I correct that the ingredients included 2 breasts, 1.5c of bbq sauce, 1 cup cranberries and the kale? (just worried I overlooked something.)
