Apple-Cheddar-Bacon Frittata

Ingredients:

  • 1 slice bacon
  • 1/2 large apple (about 1/2 cup chopped?)
  • 5 eggs
  • 2 tbsp milk
  • 2 slices swiss cheese, diced (or just use shredded)
  • 1/2 cup shredded cheddar cheese
  • Pinch kosher salt
  1. Preheat broiler.
  2. Chop bacon into pieces and brown. Halfway through bacon cooking, add chopped apple and cook for several minutes until apple softens.
  3. Mix eggs with milk, cheddar and salt. Pour over bacon and apple. Cover with swiss cheese.
  4. Place frittata under broiler (in safe skillet!) for 3-5 minutes, until brown and bubbly.
  5. Makes 3 servings, each about 300 kcal, or 4 servings at about 225 kcal.

I have made this a few times – kept with regular cheddar, added another peice of bacon, and sometimes up to TWO granny smith apples (sometimes they are small). I LOVE LOVE LOVE it. I feels….so naughty even!! Hahaha. Served with a side of rustic toast/bread, with fresh mango for dessert, usually. Have even cooked this when I had guests and served with sparkling wine! It rocks!!
