Fast, Furious and Fresh

I’ve been productive today but I’ve gotten nothing done! The only major accomplishments were a workout and making lunch (and dinner!!!!!!!! which is marinating), but I need to get on the ball these next 3 hours. And I have two conference calls – gah!

I biked to the Y with lots of energy for a late-morning workout. I spent 40 minutes on the ET, then biked back home and did the C + K 10 Minute Challenge.

Then I was more than very hungry for lunch!

I made a wrap with leftover Siesta Salad

And a watermelon, blueberry, goat cheese + romaine salad tossed in Berry Balsamic Vinegar and Lemon Olive oil.

This vinegar came from Dean + Deluca – love it!! It’s nice and syrupy just how I like it.

How to cut a watermelon in cubes: 1) Cut a bisectional round 2) Cut off the “cheeks” to form a square 3) Cube your square

I love to use leftovers as lunch wraps the next day. It’s one of my favorite things. It’s like they always taste better on Day 2 to me. Your watermelon is so vibrant. Aren’t you thrilled summer is finally here? :)

The watermelon tutorial was great! I was really struggling to cut my giant watermelon the other day. I ended up with juice and seeds everywhere!

great looking wrap! any wrap with avocado in it looks good to me. I love the idea of that salad and that balsamic sounds great.

Good advice about the watermelon cutting! I’m still nervous to cut mine… it is too big for my cutting board and I’m scared the knife will fall off the watermelon and slice my granite countertops!

Sounds like my day too.. all I’ve done is work out and I ran an errand but I still feel sooo unproductive lol

For some reason, I’ve always stayed away from lots of fruit in green salads, but your combination of watermelon/blueberries/balsamic looks great!. You’ve inspired me to try it :)

Also, I’ve been doing the C+K challenge and I really like it!

You are such a pro at slicing avocados–you put me to shame with my chunky/mushy avocado messes.
What flavor of La Croix is that? I just got a 12-pack of the berry flavor.

Your salad ingredients are so creative and the Berry Balsamic Vinegar on watermelon would satisfy anyone’s sweet tooth. Healthy and sweet? Perfect!
