Electric Monday

January 23, 2012

Today was one of those days where I just charged through. I had focus. I have no idea what controls my drive, but I think it’s 25% hormones, 25% the weather (even though today was bad!?) and 50% the day of the week. Mondays seem to have more electric charge to them. I got so much done today!

And it was going swell until I just sliced my knuckle open with our chef’s knife while doing the dishes. It’s not serious, but it hurts to type!

Power snack of cereal and milk:

Dinner tonight was ready in 10 minutes thanks to leftovers!

Veggie lasagna

Virginia roll!

And Caesar salad with homemade dressing

We had leftover romaine from Saturday but no Caesar dressing, anchovies or parmesan in the house. What I whipped up, though, was pretty darn good!

ROUGHLY [because I didn’t measure]:

  • 3 tbsp Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp nutritional yeast
  • Pinch pepper

It was tasty!

We just finished a Lost and now I’m off to read my book!

Leftover lasagna is the best. Your dressing looks tasty. I got a ton done today too. Must be in the air!

2 kathleen @ the daily crumb January 23, 2012 at 8:52 pm

the weather definitely has an effect on my productivity levels. either extreme (super sunny or super rainy) yields a major decrease — either want to be outside or curled up with a blanket!

mmmm that lasagna looks just as delicious the second time around!

3 lynn @ the actor's diet January 23, 2012 at 8:52 pm

it’s been raining all day here in LA and has made me semi-productive. spurts!

4 Kinley @ Better Off Barefoot January 23, 2012 at 8:53 pm

Oh I love the idea of greek yogurt mixed as a salad dressing! And cereal and milk is my favorite snack. Ever! 😉

5 thatShortChick January 23, 2012 at 9:00 pm

I’m the most productive on monday nights, oddly enough. although this cold, rainy monday sort of put me in a mood. I also enjoyed some veggie lasagna tonight as well!

6 Susan H. @ The Food Allergy Chronicles January 23, 2012 at 9:05 pm

Leftovers are the best! Our dinner consisted of a medley of frozen sauce reheated, some with ground turkey and some with turkey meatballs. I added more ground turkey and I think there will be enough for tomorrow’s night as well…love leftovers for leftovers! lol

7 Sarena (The Non-Dairy Queen) January 23, 2012 at 9:13 pm

Sorry about your knuckle. I am the worst at doing that kind of stuff. I felt super charged today too. I got certified in CPR/AED and really, how could you have a bad day after that. Enjoy your book and sleep well!

8 Katie @ Peace Love & Oats January 23, 2012 at 9:13 pm

ahhh that lasagna just looks so delicious!!!!

9 Emily @ The Swallow Flies January 23, 2012 at 9:14 pm

I’m so glad you’ve been productive today! I’ve been DRAGGING. I think if every weekend was a three-day one, I’d be so much more energized during the week!

10 Molly @ RDexposed January 23, 2012 at 9:16 pm

Mmm, I love leftovers for dinner! I can’t believe there are people who hate leftovers!

11 Erin January 23, 2012 at 11:12 pm

Anyone who hates leftovers probably has someone else doing the cooking. My grandfather hated going out to eat…because he had my grandma at home cooking for him…and cleaning it up. :)

12 Katie @ Talk Less, Say More January 23, 2012 at 9:18 pm

I love dinners that come together so quickly. Tonight mine is taking a good 30 minutes and while that isn’t THAT long, it’s too much for tonight. 😉

13 Laura Jane @ Recovering Chocoholic January 23, 2012 at 9:19 pm

I think your day was so productive because you stole all my energy! I was just thinking about how little I accomplished this evening.

14 Michelle (Better with Berries) January 23, 2012 at 9:24 pm

When you mention Lost it’s making me want to go back and watch it! I watched every season except the last one. Don’t ask me how that happened. I need to go back and find out how it all ended!

15 Emily January 23, 2012 at 9:24 pm

What book are you reading?!

16 Jen January 23, 2012 at 9:31 pm

Just what I was going to ask! Are you back to The Hunger Games now?

17 KathEats January 24, 2012 at 9:45 am

A Visit from the Goon Squad for book club. Not my cup of tea. Hunger Games resumes next!

18 Lauren @ What Lauren Likes January 23, 2012 at 9:26 pm

I like the dressing recipe! Delish sounding :)

19 Annie @ Naturally Sweet Recipes January 23, 2012 at 9:29 pm

What a great meal! It all looks delicious!! Milk and cheerios are one of my fav snacks too!

20 Blessing @ Working Mom Journal January 23, 2012 at 9:39 pm

I love leftovers too!

21 emily January 23, 2012 at 9:44 pm

Every time you mention that snack, this plays in my head! http://www.youtube.com/watch?v=pONdKYbmOV0

23 Betsy January 23, 2012 at 9:45 pm

Brilliant faux-caesar dressing – I never would have thought of that (nutritional yeast!) I wish I were in full swing on Mondays. It took me until my afternoon workout to get that good-productive glow going.

24 Kristen @ Change of Pace January 23, 2012 at 9:45 pm

I’m the only one in my house that actually likes leftovers. To me most food tastes even better the next day. Today was productive for me as well. I’m thinking its the weather.

25 Laura January 23, 2012 at 9:53 pm

I envy your ability to pour a teeny glass of wine. I always think to myself (just have 3oz pour with dinner, that will be nice) but then I get out a glass and pour far more. I clearly need to build up restraint! Hope your finger gets better.

26 Erin Motz January 23, 2012 at 10:15 pm

Cereal in a mug = one of my favorite things. It’s so pleasant… like a cozy memory. Snuggle on the couch in sweats, a blanket, and a mug of your fave cereal. :-] Mmm, I could go for some now!

27 Kerry @ Totes My Oats January 23, 2012 at 10:20 pm

I love days when I get so much accomplished!!! That dinner looks great – leftovers are an angel.

28 Averie @ Love Veggies and Yoga January 23, 2012 at 10:23 pm

I like the sound of your homemade dressing. Yogurt bases are so versatile and yield great finished products.

The leftovers and dinner being ready in 10 mins..amen for (planned) leftovers! They save me.

29 Megan January 23, 2012 at 10:24 pm

That Virginia roll keeps grabbing my attention! LOL! It looks so good!

30 Deva @ Deva by Definition January 23, 2012 at 10:49 pm

What book are you on? The Hunger Games trilogy or something else? I read the whole Hunger Games trilogy in about 12 hours – I couldn’t put it down!

31 KathEats January 24, 2012 at 9:45 am

Visit from the Goon Squad – don’t like it. Going back to Hunger Games next!

32 Angel7 January 23, 2012 at 11:12 pm

That must really hurt when you bend your fingers!

Years ago, my fourth finger got cut bad on the skin under my nail when I broke a casserole dish while washing it in the sink. I did not know that I cut it until I noticed the blood. I had someone butterfly bandage it, and it healed quite nicely. Now I am very careful when holding any type of glass dishes and such in the sink!

33 Kavi @ Lab to Fab! January 23, 2012 at 11:28 pm

All that yummy cheese… now I’m craving veggie lasagna!

34 Ashley @ Coffee Cake and Cardio January 24, 2012 at 12:01 am

Ehh, cutting yourself is the worst! Sorry to hear that.

35 Khushboo January 24, 2012 at 12:26 am

The day of the week definitely impacts my productivity levels…unsurprisingly, my motivation is relatively low by Fridays!

36 Jasper @ crunchylittlebites January 24, 2012 at 12:42 am

yum yum Yum yum Yum! I am not sure I understand nutritional yeast and all it’s uses but it’s gunna be GREAT, I just know, when I try it!

37 Med School Odyssey January 24, 2012 at 1:56 am

10 years working in restaurants, and the only time I’ve ever cut myself was when our dishwasher stuck my knife point-down in a wooden cutting board. Have a giant scar on my right hand from that – nothing since then.

Be careful!!!!

38 J3nn (Jenn's Menu and Lifestyle Blog) January 24, 2012 at 2:23 am

Meals from leftovers are the best! That veggie lasagna looks dynamite.

39 Aileen January 24, 2012 at 2:27 am

Dinner sure does look tasty and filling!

Hope you’re knuckle is healing well.

40 Aileen January 24, 2012 at 2:28 am

clumsy me…that’s supposed to be “your”

41 Ash Bear January 24, 2012 at 5:51 am

I love cereal in a mug and leftovers! I feel like I eat each of them daily in one way or another. Today’s lunch will be leftovers and based on tonight’s schedule including yoga at Strala that doesn’t end until 8:30, I feel like dinner will be cereal. :)

42 Brittnie (A Joy Renewed) January 24, 2012 at 6:17 am

I love days when I am on a roll and just plow through my to do list. Such a great feeling! Leftovers are the best. Sometimes I enjoy leftovers more than the original meal – especially when eating a pasta dish or soups.

43 Jodi @ Jodeexi Writes January 24, 2012 at 6:39 am

The weather has made it hard for me to do anything! I keep wanting to make veggie lasagna….but the thought of having a whole tray of leftovers actually turns me off from the idea. I might just have to whip up a mini one. Have a good rest of the week!

44 Angela @ Happy Fit Mama January 24, 2012 at 6:43 am

Great idea for the faux Caesar dressing. The hubby loves Caesar so I’ll have to try it on him.

45 Jen January 24, 2012 at 7:18 am

My roommate sliced her knuckle doing dishes yesterday too! Except hers required a 4hr trip to the ER to get stitches… who knew doing dishes could be so deadly?!

46 Emily January 24, 2012 at 8:12 am

that dressing sounds pretty easy as well as tasty, wow!

47 Rebecca @ Naturally Healthy and Gorgeous January 24, 2012 at 8:24 am

Yummy looking dinner!

48 Meagan January 24, 2012 at 8:34 am

I really like that ranch greek dressing idea – I’ll have to find some nutritional yeast! Where do you buy yours? Seems as if there’s controversy about bulk bins vs non bulk bins for it

49 KathEats January 24, 2012 at 9:46 am

I’ve never heard of that controversy, but I buy mine from the bulk bins

50 Cait's Plate January 24, 2012 at 9:37 am

That whole meal looks so incredibly comforting from start to finish!

51 Life's a Bowl January 24, 2012 at 11:48 am

Greek yogurt makes the best creamy dressings! I’m not a big mayo [or Miracle Whip] fan, but usually add a splash of vinegar to water it down and some spices to add a little zing :) My momma uses it to make a homemade ranch dip for veggie platters!

52 Karen January 24, 2012 at 1:26 pm

I’d say my productivity is determined by 50% hormones and 25% weather and 25% everyday distractions. The day of the week is pretty irrelevant.

I noticed your unfavorable comment re. Goon Squad – I only got a few chapters in this summer before declaring it a dud. Sorry you have to suffer through it; hopefully there will be some redeeming qualities to it in the end? I recall the reviews were pretty good.

53 Katie January 24, 2012 at 3:03 pm

Hi there! QQ for you Kath- do you prefer the nutritional yeast powder or flakes? I’m planning on venturing into nutritional yeast world and have heard people swear by both. Also – any suggestions on some other yummy uses for it?

54 KathEats January 24, 2012 at 5:35 pm

I have only tried the flakes – never seen the powder. But I like the flakes! I feel that they are more fun to eat on food!
