Not your typical eggwich!
Matt made up some egg salad with the hard boilers I prepared this weekend and saved me a smothering for my lunch today. It’s made with carrot, celery, spices and likely a little mayo and mustard. I plopped the salad onto a Flax Oat Bran bun.
FOB is the best of the best!!
On the side: more minty cantaloupe!!
And an army of carrot + celery with a small spoonful of Barney Butter
I look at that lunch and think two things: nutrients and variety! Yum!
Afternoon snacks: the other half of my Amazing Grass bar and a small apple
