Not your typical eggwich!

Matt made up some egg salad with the hard boilers I prepared this weekend and saved me a smothering for my lunch today. It’s made with carrot, celery, spices and likely a little mayo and mustard. I plopped the salad onto a Flax Oat Bran bun.

FOB is the best of the best!!

On the side: more minty cantaloupe!!

And an army of carrot + celery with a small spoonful of Barney Butter

I look at that lunch and think two things: nutrients and variety! Yum!

Afternoon snacks: the other half of my Amazing Grass bar and a small apple

4 Jessica @ How Sweet April 30, 2010 at 11:33 am

I love egg salad. It reminds me of my grandma and my childhood!

5 Ameena April 30, 2010 at 11:37 am

I used to eat egg salad sandwiches all the time – but forgot about them for a while. I need to resurrect them again!

6 Diana April 30, 2010 at 11:38 am

That egg salad sandwich looks amazing. So jealous of that healthy bread though. We do have a lot of amazing bread here in Portugal but not really whole grain with natural ingredients!

7 Katie@ Two Lives, One Lifestyle April 30, 2010 at 11:40 am

I was going to say what everyone else already said- I love egg salad and never, ever make it. The little reminders about delicious (but forgotten) foods is what I love about reading food blogs! I should totally add this to my lunch rotation, it’s cheap, filling, healthy with some added veggies.

12 Nicole April 30, 2010 at 11:55 am

I seriously want some egg salad right now, looks delicious!

13 Johanna B April 30, 2010 at 11:57 am

I had an egg salad sandwich every one of the 180 days of school during my first grade year. I haven’t eaten one since. In fact I haven’t eaten eggs since then.

14 Jil @ Peace, Love & Munchies April 30, 2010 at 11:59 am

Ohh, I haven’t had egg salad in a looong time – that mixture sounds awesome.

18 Lisa C. April 30, 2010 at 12:03 pm

I need to get myself some of that bread! And that sandwich is far superior to the kashi frozen meal I just had– i was desperate!

19 Sarena (The Non-Dairy Queen) April 30, 2010 at 12:08 pm

I love a good hardy bread like that! Have you tried orange zest on cantaloupe? With the mint…it is amazing! It really enhances the flavors! Have a great afternoon.

20 Heather @ Health, Happiness, and Hope April 30, 2010 at 12:09 pm

That sandwich sounds fantastic! And I love the variety in you lunch.

21 Liz April 30, 2010 at 12:10 pm

Hi Kath, I know you like your veggies and you like different things to dip them in. Have you tried BBQ sauce yet? I had a sald at a restaurant w/BBQ sauce instead of dressing and it was fantastic! Now I eat a lot of my raw veggies and salads with a little bit. Hope you are having fun at your internship

22 Kath April 30, 2010 at 2:53 pm

It’s not my favorite, but I’ve had it before!

23 Eileen April 30, 2010 at 12:11 pm

I *don’t* like egg salad … but I love the addition of so many veggies!

24 Lily @ Lily's Health Pad April 30, 2010 at 12:18 pm

I love the minty cantelope idea!!

25 Erin (Travel, Eat, Repeat) April 30, 2010 at 12:18 pm

That bun looks great–love all the seeds. Thanks for the reminder to stop by the bakery tonight and see if the seasonal summer breads have started coming out yet.

26 Veggielady4life April 30, 2010 at 12:31 pm

Ohh…. I’m gonna have to be honest and say mayo is the one thing I cannot eat. But your Barney butter looks delicious!

27 Wei-Wei April 30, 2010 at 12:38 pm

I don’t really like egg salad :( It must be the mayo… This sounds good, though! I’ve never really thought mixing crunchy veggies like carrots or celery with egg salad would taste good, because in my mind egg salad was always sort of just… mushy. But I guess those’ll give it some extra good texture? :S

I look at your lunch and I see: YUUUUUM! 😀

Hope the rest of your Friday is wonderful! :)

28 Claire April 30, 2010 at 12:39 pm

I still need to search for that bread at GH! Looks tasty.

29 Mary April 30, 2010 at 12:59 pm

I haven’t had egg salad in a long time, Kath!

30 Steph- Exercise Physiologist & Artist! April 30, 2010 at 1:04 pm

Jealous :)
Hope you are having a great friday!!

31 Abby April 30, 2010 at 1:05 pm

I’ve seen a lot of people eat carrots with almond butter. I just don’t think I can do it!

32 Amber K April 30, 2010 at 1:18 pm

I am not a fan of egg salad, but that bread looks good enough to eat with anything!

33 runnerforever April 30, 2010 at 1:22 pm

Friday indeed!! Have a fantastic weekend girl.

34 jill April 30, 2010 at 1:25 pm

37 Camille April 30, 2010 at 1:31 pm

Oh man, egg salad! I had sort of forgotten about it! One of my favorites, thanks for reminding me :)

38 Cali April 30, 2010 at 1:37 pm

If your hubby could make a gluten-free flax oat bread, I would fly out there and give him a big smooch on the cheek. That roll looks fabulous. And I have an instant craving for egg salad now! :)

39 Natalie April 30, 2010 at 2:00 pm

I used to hate egg salad but I should give it another try. Yours looks tasty.
I love, love, love carrot sticks with peanut butter or almond butter. It is just the best, far better than ranch for dipping.

40 jen trinque April 30, 2010 at 2:05 pm

Love the beautiful, summery pictures, as always!

41 lynn (The Actors Diet) April 30, 2010 at 2:41 pm

i fix eggs early on the week too – the other day i mistakenly boiled the water first and then dropped in the eggs (i was thinking pasta) but it turns out it still works – just harder to get the shell off, FYI!

42 Marisa (Loser for Life) April 30, 2010 at 2:48 pm

Those buns look so delicious! I love army carrots, too 😉

43 [email protected] April 30, 2010 at 3:33 pm

Wow that bread looks amazing. I wish we had Great Harvest bakeries here in Canada!

48 Hannah April 30, 2010 at 11:14 pm

I don’t think I’ve ever made or eaten an egg salad sandwich. I think it’s maybe a more American thing? This does look yummy, though!
