Productive morning ending shortly with an early lunch! What did I do differently today that caused me to get so hungry so early? I forgot the nut (seed) butter!! I swear that tablespoon makes such a difference in satiety! I could have gone another 45 minutes or so, but I have errands to run this afternoon and wanted to get lunch over with so I could get out of the house!

I made a fantastic open-faced sandwich on a thick slice of Dakota bread -

Topped with a layer of Whole Foods Lemon Hummus, 3 slices of sharp white cheddar and sliced avocado.

So thick I had to eat it with a knife and fork – which was actually quite nice!

Los chips (pronounced “los cheeeeps”) on the side!

Peace out!

I LOVE that lemon hummus. I could eat it with a spoon. In fact, I have to try hard not to.

I need to get some of this lemon hummus you speak of!! Or make some, I suppose. Lunch was early for me too today. I think it was because I had a really hard workout this morning so I’m extra hungry!

That looks delicious Kath!! I am going to try and do something with some avocados tomorrow! I have some fresh tomatoes from my garden that I really want to mix with something and I may make guacamole! :-) This is my first year having a garden and things definitely taste better fresh off of the vine!
