Thanks to Chelsea for giving me the rest of her roasted acorn squash last night! I was able to chop it up and cooked it with leftover butternut squash soup from our party into a delicious morphed stew. I added 3 slices of pork I brought home from my dinner as well, and topped it all with cheese and sour cream (man I had forgotten how good real sour cream is!). It was souper filling.
Here is the RECIPE for the Curried Butternut Soup we made in the slow cooker for our party. It’s a winner!!
Matt – with his classy dishes – used up our bread and made a oozing grilled cheese for lunch. When it came out of the oven I was jealous, so he shared a corner with me to complement my lunch.

YOGA this morning was good. Lots of shoulder and chest openers – just what I needed! And biking around this town is pure bliss. Mountains in the distance, people to watch.
I was going to drive to Roanoke today for a dietetics meeting, but I decided that 4 hours of driving and $35 were a bit much for the event. So I canceled the trip and now have an open afternoon to get some things done.
We’re embarking on a trip down south this weekend for Matt’s dad’s wedding! Through Charlotte to see our friends and then to Spartanburg (where Matt is from) for the weekend festivities. I don’t think I’ll have time for any meet ups in SC, but I am going to see BRENDAN JAMES again in Charlotte on Monday 10/11 if anyone wants to join!

I prefer my grilled cheese fried in a pan rather than baked.
I have it so infrequently that it’s worth it to indulge in a fried sammie once in a while.

Oh, man, that grilled cheese looks amazing!! The weather has turned cool here (at least for a little while) and I’m craving soups. I’ve never had butternut squash before, but the husband has had butternut squash soup at a local restaurant and really liked it so I am hoping to make some.

I just love suddenly open afternoons! I could really use one right now..but I don’t see that happening.
I just had a grilled apple and cheddar sandwich from the urban farmhouse in richmond. when you come into town next week, you should check it out if you havent been already? the entire place is amazing and the food is delicious to boot. they serve all fresh and local foods, changing the menu w/ the seasons.
I absolutely LOVE how pretty your bowl is! Although don’t get me wrong, what’s IN the bowl is just as pretty as well…. pretty delicioussss.

Grilled cheese looking yummy. Never baked it in the oven. What is the temp and cook time if you do not mind sharing? I have a great blueberry infused cheese I bought the other day and would love to try it in the oven!
I used the broiler for this one. I toasted both sides of the bread first. I left one a little under-toasted, and then added the cheese. Another couple minutes and the cheese was oozy and delicious.
The most important part of a grilled cheese sandwich is making sure the bread gets cooked too… gooey cheese is nothing if it’s only supported by flabby bread.

Yuuuuum! For some reason that sounds amazing to me, and I don’t even eat pork! Repurposing restaurant leftovers end up creating the best dishes.
I had butternut soup today, too! It wasn’t nearly as good looking as your bowl, though.
4 hour drive, that’s not worth it. Now you can relax and have fun, which is so much better.
