Delicious + Nutritious

March 19, 2012

Snack attack around 4pm – hunger comes on FAST these days!

Nutritious. Not delicious.

So I threw it out and switched to this instead:

I toured a house with Karen this afternoon and walked there (1 mi) to meet her. It seems like the perfect fit (she’s hoping to rent something downtown) so hope all goes well getting her in!

When I returned home, hungry again! Like stomach-growling hungry. I chugged some water and ate this protein-packed bowl of greek yogurt with raspberry jam and chia seeds.

And worked on the porch for the rest of the afternoon!

Dinner was goooood!

I defrosted this hot smoked salmon that I won at the Foodbuzz Festival this November and we heated it in a pan (I know, smoked salmon, but I gotta) along with some baby spinach = nutritious.

And then we made the delicious part of the meal!

Maccccccccc! Remember my disappointing experience with the powdered mac? Deluxe squeeze pack is the way to go. Super energy dense and high in sodium and fat, but sooo good! Way better than powdered kind!

Consumed on our beautiful evening porch! We sat out there talking long after the sun set.

My stomach is full and huge!!!!

That mac n cheese looks so good! I’m weary to try some gluten free brands, but I guess I’ve just got to jump in and give them a whirl!

2 Kelly @ Vegolosophy March 19, 2012 at 7:52 pm

mmmm that cappuccino flavor lara bar looks great!! I haven’t had that flavor yet, I hope I can find it next time I hit up Whole Foods!

3 Sara March 19, 2012 at 7:53 pm

Hey Kath,
I have been reading your site for quite awhile now and love all your ideas for oatmeal! Thank you! I was wondering when you say you “worked” or you work at home, what is your job? You never mention what you do. I know you maintain this blog but that doesn’t pay money does it? Just curious. Thanks again for you wonderful site!

4 KathEats March 19, 2012 at 8:45 pm

Hey Sara,
Indeed, blogging and maintaining a website is a full-time job :) I do make a living from it. I’m operating two blogs now ( and so it’s now twice the work – or maybe more like 1.5 times :) I also do a bunch of little projects on the side – from working at the bakery I own with my husband to smaller freelance projects related to KERF.

5 Lisa @bitesforbabies March 19, 2012 at 7:53 pm

Don’t you find that your belly seems SO much bigger (and bloated!) by the end of the day?!! Just imagine when you hit the nine month mark! Lol!

6 KathEats March 19, 2012 at 8:45 pm

Yes, totally!

7 Sana March 19, 2012 at 7:54 pm

Mac and cheese is so stinkn’ good.

8 The Mrs @ Success Along the Weigh March 19, 2012 at 7:54 pm

9 Ashley @ My Food 'N' Fitness Diaries March 19, 2012 at 7:55 pm

10 Megan's @ Megan's Munchies March 19, 2012 at 8:02 pm

Sounds like a wonderful evening! Enjoy the rest of it!

11 Gia March 19, 2012 at 8:06 pm

your porch is so adorable … what a beautiful place to spend the evening!
Have you tried the new Larabar Uber? I had the bananas foster and it was divine!!

12 KathEats March 19, 2012 at 8:45 pm

Ooo no, I haven’t seen those!

13 Lauren @ Oatmeal after Spinning March 20, 2012 at 8:13 am

Ooh, I got that one but haven’t tried it yet! Glad to hear that it’s as good as it sounds!

14 Amelia March 19, 2012 at 8:18 pm

I am in love with smoked salmon, and was even more obsessed with it while pregnant! Hopefully Lucy is extra smart b/c of my obsession πŸ˜‰

15 Sarena (The Non-Dairy Queen) March 19, 2012 at 8:19 pm

I so love your porch! I wish I had one like that. One day…

Dinner looks delicious. I do miss good ol’ fashion mac and cheese sometimes. Have a great night Kath!

16 lynn @ the actor's diet March 19, 2012 at 8:21 pm

mmmmmac and cheeeeeese. yum.

17 kathleen @ the daily crumb March 19, 2012 at 8:23 pm

i love mac n cheese!! always seem to forget about it though. as embarrassing as it is, i have to say i have great trouble straying from my favorite kraft, BUT now i’m anxious to try the deluxe squeezables. have a good night, kath :)

18 katie @KatieDid March 19, 2012 at 8:23 pm

gorgeousss evening and porch, I would be spending every waking moment out there. Dinner sounds like a winner too!

19 Cait's Plate March 19, 2012 at 8:25 pm

20 [email protected] for the Soul March 19, 2012 at 8:30 pm

Hahaha baby kerf must be stealing all your food away! And your house is seriously sooooo gawgeous!!

21 Ildiko Stuban March 19, 2012 at 8:32 pm

Hi Kath,
I enjoy your website so much! Thank you!
I would like to find a recepie by ingredience. Right now I am looking for some recepie with mushrooms. How can I find them?
Thank you. You are great!

22 KathEats March 19, 2012 at 8:47 pm

If you type this in you’ll find shroom recipes!

23 jojo March 19, 2012 at 8:32 pm

Yeah… I’ve never tried that bar, but I’ve had bars that are healthy and “tastes healthy” lol
I love salmon, I could taste it just looking at your photos..:P

24 Katie @ Talk Less, Say More March 19, 2012 at 8:36 pm

Man I LOVE mac and cheese! I grew up on the powder kind so it’s never bothered me. πŸ˜‰

25 Kristen @ Change of Pace March 19, 2012 at 8:37 pm

I actually keep a box of that mac-n-cheese on hand at all times. It may not be the most nutritious choice but it’s quick, comforting, and easy to mix in fresh ingredients.

26 Jamie @ Don't Forget the Cinnamon March 19, 2012 at 8:41 pm

Just the descriptions on that bar make it sound pretty iffy!
Have you ever made mac n’ cheese using pasta and laughing cow wedges? I love using the swiss ones (two wedges/serving) to make deliciously creamy mac n’ cheese!

27 Sarah March 19, 2012 at 8:50 pm

This looks like it would be idea for you.
This way you can customize it but get the same creamy taste :)

28 Liz March 19, 2012 at 11:33 pm

Wow, thanks! That recipe looks so easy & MUCH better ingredients than the boxed (which is so tasty when you get the deluxe with the cheese sauce vs powder) :)

29 KathEats March 20, 2012 at 8:34 am

That does look great!

30 Sarah March 19, 2012 at 8:51 pm

LOVE your porch! So peaceful :)

31 Kaila @healthyhelperblog! March 19, 2012 at 8:59 pm

I Loooooove the cappucino larabar!!! But sadly I ate all my samples and no stores around me carry them! :( I miss them!!!

32 Ashley @ Coffee Cake and Cardio March 19, 2012 at 9:00 pm

Your dinner looks so comforting. It’s a beautiful evening, day really, so it’s great that you spent so much time outside.

33 Jessica March 19, 2012 at 9:02 pm

hi kath! heard from my mom that you guys got to meet and tour the house today, so glad karen liked it. i loved living there when i was in cville. :)

so i think we’re living parallel lives, because i had mac n cheese tonight too! yum. never have tried the whole foods brand though… will have to put it on my list. and how funny that we’re due the exact same day!! i’ve been wanting to tell you that you have totally turned me on to smoothies – i have one almost every day now. i find them to be the perfect pregnancy food… healthy, filling, and easy to digest. i’m sorry you’re still not able to eat greens. i’ve been back eating salads for 2 wks or so now, and it’s great. i missed them! still can’t quite stomach fish though, but your smoked salmon sounds good!

anyway, love your blog and will definitely keep reading!

34 KathEats March 20, 2012 at 8:35 am

Hey Jess!!
Yes, we are totally twins :) I didn’t realize we were due the same day either!

Karen LOVES the house – it’s beautifully done and perfect for her! Your parents are sweet too.

We’ll have to meet the next time you’re in Cville!

35 Jessica March 20, 2012 at 2:17 pm

36 Caroline @ After Dinner Dance March 19, 2012 at 9:25 pm

Wish I had a porch like that to enjoy dinner on! Lucky you :)

37 Jessica @ The Process of Healing March 19, 2012 at 9:33 pm

OH mac and cheese… it might not always be so nutritious but it’s SO delicious!

38 Brittnie (A Joy Renewed) March 19, 2012 at 9:41 pm

So in love with your porch. Sigh. Looks like it could be in a magazine. :)

39 Angel7 March 19, 2012 at 10:00 pm

I have not found a boxed macaroni and cheese that I actually love. I have never tried the 365 Everyday Value brand, though.

40 Averie @ Averie Cooks March 19, 2012 at 10:00 pm

It seems that everyone raves about the 1st bar you featured but Im kinda with you…not in love with them, or maybe I’ve tried the “wrong” ones. Glad you went back to an old standby.

41 KathEats March 20, 2012 at 8:36 am

I actually think there are two flavors. I think this was the lemon/lime one but I remember liking the other one I had ages ago

42 Jess @ Flying on Jess Fuel March 19, 2012 at 10:04 pm
43 KathEats March 20, 2012 at 8:36 am

That’s awesome!!! I have that phrase framed :)

44 Dynamics March 19, 2012 at 10:29 pm

Kraft has individual packages of Easy Mac. Put the noodles and water in microwave and then add the powdered cheese. Yummy and wet and delicious if you are after junk food that is not good for you. Adding more or less water makes it dryer or wetter. Oh such good language. They come in 10 individual packages per box. Once in awhile you just have to have it. Nice to have in the cupboard for just those days.

LOL, yes I am a human. That is so cute!

45 Laura @ She Eats Well March 19, 2012 at 11:02 pm

I’ve always wondered how those Raw Revolution bars are. But alas, Larabar wins…always a great choice in my book, especially the PB Choco Chip!

46 Khushboo March 19, 2012 at 11:55 pm

Agreed about the Raw Revolution bars- the cookie dough flavor was pretty nasty!

47 Grace March 20, 2012 at 12:00 am

Your porch is so beautiful !

48 Stacy @ Say It With Sprinkles March 20, 2012 at 12:15 am

Now I have to try this Raw Revolution bar that everyone is hating on, just to see if it really is THAT bad, haha! =)

49 Julie Goes Healthy March 20, 2012 at 12:41 am

Mac and cheese & salmon sound delicious!

50 Eva March 20, 2012 at 1:36 am

ohh that Mac and Cheese looks good. I’m new to the Kath Eats site, but I’m excited to try some of those oatmeal recipes!

51 KathEats March 20, 2012 at 8:37 am

52 Shana March 20, 2012 at 6:15 am

I used to make it my mission to squeeze every last glob of cheese out of the packet. I even had to implement the toothpaste rolling technique a few times but I feel it was well worth it :)

53 KathEats March 20, 2012 at 8:37 am

I totally did that

54 Susan H. @ The Food Allergy Chronicles March 20, 2012 at 6:36 am

I so wanted to eat my lunch out on our porch yesterday…but than meant unearthing all the furniture…ugh! Dinner on the porch and chatting until after sunset…so romantic! Oh I am looking forward to those summer nights!

55 Hope @ With A Side Of Hope March 20, 2012 at 7:02 am

I’m so jealous of your porch! It looks so relaxing and it must be perfect to eat out there :) I love macaroni and cheese! It’s the best.

56 Lauren @ What Lauren Likes March 20, 2012 at 7:06 am

Sounds like an amazing night :)

57 Fran@ Broken Cookies Don't Count March 20, 2012 at 7:07 am

The porch looks So comfy!

58 Sam March 20, 2012 at 7:09 am

I “pinned” your porch! You need a “pin it” button!

59 KathEats March 20, 2012 at 8:38 am

I have one! Although I see now it’s more for the whole post than one photo. I have the Pinterest Chrome extension that lets you choose any photo on a page – so handy.

60 Samantha March 20, 2012 at 12:12 pm

I wonder why I don’t see it. I wonder if its an OS thing (I use firefox)? I don’t see it on my ipad either. Hmmm?

61 Jodi @ Jodi, Fat or Not March 20, 2012 at 7:53 am

I love mixing yogurt and jam…I always thought it was a bit of a strange combo, so glad to know others do it too haha.

62 Lauren @ Oatmeal after Spinning March 20, 2012 at 8:11 am

Your porch looks BEAUTIFUL!! I bet you can’t even imagine your house without it now!
And that bar (the first one)… yeah, definitely doesn’t sound tasty to me. I either LOVE lemon in things or HATE it. It has to be just right!

63 Ashley O. @ The Vegetable Life March 20, 2012 at 8:57 am

Your porch makes my heart swoon!

64 marnie March 20, 2012 at 9:48 am

your porch is what every family needs: a place to gather, to chat, to make memories. i want to come over and read a book at your place!

65 Alison March 20, 2012 at 10:33 am

I totally pinned your porch too. I long for one. So jealous! going to be great hang out spot.

66 Kelley March 20, 2012 at 11:59 am

I should be ashamed at the amount of Mac & Cheese I’ve eaten in this pregnancy. =) Carbs and Cheese. Can’t go wrong…. We have some restaurants in LA that make Mac & Cheese stuffed Grilled Cheese! No joke.

67 ~Christy @ wonderofallthings March 20, 2012 at 1:22 pm

Love the visual of the porch and the thought of sitting out talking after dark! Such an amazing treat to add to the new house :)

68 Susan Mc March 20, 2012 at 3:48 pm

Hey Kath! I know you’re crazy busy right now, but I have a possible add to your Home Neat Home series that I’d LOVE to see… A co-worker is buying a new home and wants to do a porch addition/reno… I sent him to your blog and we both had a hard time nailing down a good round of posts related to your porch. It’s exactly what he’d like to do, and he loved what he saw. When you’re ready for the next installment in the (awesome) home series, a porch post would be da bomb!!

69 KathEats March 20, 2012 at 6:54 pm

Hey Susan! So just a post on the design details? I don’t know the names of them since our contractor did most of the design himself, but I can definitely do a post that recaps the construction and includes lots of photos?

70 @MasPublicHealth March 22, 2012 at 3:03 am

How funny; I tried the same Raw Revolution Lemon Dew bar today and loved it. Different strokes, I suppose.

71 Julie March 24, 2012 at 1:25 pm

I’ve never tried the Lemon Dew Raw Revolution bar, but their Chocolate Cashew bar is delicious/worth trying, even if the lemon was not! (:
