Just finished the movie A Good Year. It was absolutely stunning to watch!!!
Dinner tonight was simple and delicious –
Chilled Sun-Dried Tomato Shrimp Pasta Salad
We steamed some South Carolina shrimp, peeled ‘em and tossed them with Karen’s sun-dried tomato pesto (from last night’s post) with spinach, zucchini and kalamata olives. So much fresh flava!!!
It was enjoyed by all!
I sipped on Matt’s wine a bit but stuck to sparking water myself. Love the La Croix flavored ones.
During the movie we had MORE of that MELON!
And now I’m ready to crash….
….Crash into the waves of Carolina Beach!!! Leaving early tomorrow! Be back for breakfast first – see ya!

Mmm, what a refreshing summer dinner! I love how you’re using hummus as the salad dressing – seems like that’s been happening over at Allie’s blog, too!

That looks wonderful! I am going to have to try it!
I would have to try those waters to see what you mean. I once tried a plain La Croix seltet water on a flight, and I found it to have a metallic taste. Maybe their flavored ones are better, but I’ll stick to Polar and our local grocery brand seltzers for now.
Have a great trip to the beach.
Love cold pasta on salad. I usually make extra so I can top a salad with it…if Hunni doesn’t get to it first :0)
Looks like a great pasta. Safe travels!
I love simple fresh healthy dinners. I am definitely making that pesto.
So lucky you are going to the beach, Kath!
Your hair looks pretty – I bet it smells great too ; )
So exciting!! THE BEACH!
Dinner looks not only delicious, but super simple and I totally need to recreate it, reminds me of a summer dinner party type meal. Enjoy crashing into your bed!
That salad looks great! Hope you have a fantastic time! You’ve earned a good vacation after the last few months you’ve had!
Because of you I picked up a beautiful watermelon today! Can’t wait to feast on it.

I have GOT to make that pesto!!

I love La Croix flavored seltzers! So bummed they stopped carrying them at my local Costco. Have fun at the beach.
They have La Croix at Costco for cheap…did ya know? I bet you did but just checking.
HAVE A FAAAAAAB VACAY!!!!
Wow, beach holiday! Hope you get to soak out all your stresses from the past weeks in teh sun! Yay!
Ahhh that looks fantastic! Have a good weekend Kath!
Yay for beaches!! Have funnnn
Yum! Watermelon makes the best dessert in the summertime.

What a fun, summery meal.

Is it wierd that I am excited for YOUR beach vacation!??? haha. Hope you have a great time!
When I see pictures of you now, I can tell you’re happier and much more relaxed now that you’ve finished your internship. Congrats!
That dinner looks fabulous!!! Gourmet even.
Great looking dinner. We make something similar but with black olives instead of the kalamata olives. I’m going to have to try that!
I’m just now getting into the La Croix waters. I’m so not used unsweetened seltzer, so it’s taken me a while to get over the feeling that I’m taking Alka-Seltzer, but I’m coming around! I look forward to trying the flavors other than cran-raspberry.
Oooh, that dinner looks fab but I have never tries shrimp! Perhaps I should?!
Yum, I love sundried tomato pasta! That’s an awesome idea to use the leftover pesto as a sauce.
Ohhhh my gosh!!! The shrimp pasta looks amazing!!!! I’ve totally been a shrimp kick this week!!! I did Grilled Tequila-Lime Shrimp the other day (http://www.non-existentcolors.com/2010/06/fine-fresh-fierce.html) and last night whipped up Rissoto and Shrimp!!! (http://www.non-existentcolors.com/2010/07/theres-no-place-like-home.html) Enjoy your vacation!!!!! A beach would be heavenly!!!
I love LaCroix water too. Grapefruit is my favorite.
