Not sure if it was the high-carb breakfast or the long run or both! But I was hungry just a few hours after finishing my breakfast coffee.
Enter a fab and filling lunch!
First up, a stuffing salad. This Figgy Mushroom Sourdough dressing gets better and better! I served it hot over a bed of arugula dressed with olive oil, salt, honey and ground flax.
On the side, a pumpkin yogurt.
A container of Voskos Honey (purchased with a free coupon) topped with pumpkin, cinnamon and Hail Merry orange cranberry grawnola.
It’s that time of year where beverages must be served hot.

looks like I’m going to have to give that stuffing recipe a try. The way it is, leftover stuffing happens to be one of my top comfort foods…all dough-y and sage-y..yum…

Today is my first day clicking through your blog, and I have to say I love it! That Marie Claire article is what brought me here, and after coming to see this blog for myself, I am really glad my skeptical self gave you (and the other five girls) a chance!
I completing my undergrad in Dietetics at the University of Delaware, and graduate in the Spring (AHH!) and I love finding new recipes and trying new foods. I definitely want to give some of your recipes a try! They looks delicious! (I especially can’t wait to see what you do with all those cans of pumpkin.)

It hasn’t been that cold here lately (surprising, since it’s Minnesota), so I’m still drinking most of my beverages cold. I’m looking forward to those frosty mornings when all I want is a mug of tea!

Your Saturday sounds exactly like mine – right now I’m waiting for a load of laundry to finish with my feet up on the ottoman in my slippers. I may or may not have taken a shower yet… I’m going with may not have.
Your lunch looks delicious!! I need to make some pumpkin yogurt. I haven’t used any of my cans yet. I’m not sure what I’m saving them for.
That mushroom topping looks fab. Wish I liked arugula, but i absolutely HATE it! Can’t get past that bitter taste!!

I always get confused when you talk about “dressing” – as an Australia, that term only means salad dressing… we call what you call dressing “stuffing”. But regardless of linguistic differences, yours sounds so tasty!
That little glass of yogurt looks so sophisticated; like a fancy dessert.
It’s definitely that time of year for hot drinks. I love getting to try out so many new teas in the fall/winter since I go through my tea so quickly!
