Cheesecake For Breakfast

March 3, 2009

It was so cold when I woke up that I went downstairs to retrieve my laptop and noodled around on the internet in bed for a bit (the intention was to start some research).

Check out this hilarious cat video I found

When I emerged from my bedroom I saw these silly bears staring back at me from the guest room! Matt gets dressed in there on his early mornings and the bears had snuck into his jeans last night. They looked pretty well-behaved this AM :)

Then I decided to skip yoga (cold and I’m a little sore from running) and took a shower first thing. I miss doing that! Made me feel like an adult! I’m planning an evening workout with Victoria and couldn’t stand to go unshowered for the majority of my day.

Then came breakfast. I made these Strawberry Fig Cheesecake Oats with some leftover ricotta, greek yogurt and cooked strawberries.

IMG_2463 (1024x768)

The Mix:

  • 1/3 cup oats, vanilla soy milk, water, half medium banana, pinch salt
  • 2 small figs
  • 2 tbsp wheatberries
  • 2 tbsp part skim ricotta
  • 1/2 cup strawberries, cooked in the microwave for 45 seconds (you should have seen the liquid they produced that would have watered down my oats!)
  • 1 tbsp TJ’s greek yogurt mixed with a few drops maple syrup
  • A walnut brain
  • Edging of Naturally More

IMG_2466 (1024x768)

This was good, but not my favorite mixture. The ricotta was noticeable and i don’t like ricotta! I never have. Cottage cheese would have been better!

Caribou Reindeer blend + Georgia Pecan

6 Betsy March 3, 2009 at 10:06 am

I’ve never seen a cat slide like that with their legs splayed out… love it. My cats love to get their heads stuck in tissue boxes!

7 Brooke March 3, 2009 at 10:08 am

You probably have covered this before but do you every eat the steel cut oats? To simplify to cooking I soak 1/4 cup in 1 1/2 cup H2O overnight in a large microwave safe mixing bowl then cook 8-10 minutes in microwave or until desired consistency. If you don’t like the taste that is one thing but if it is the long cooking process the soaking is a way around it. Have a great day!

29 Erin March 3, 2009 at 11:07 am

Yum. Kath you have truly outdone yourself. I love looking at our daily eats….but this is by far one of my favorites! Yum. yum. yum

30 Foodie (Fab and Delicious Food) March 3, 2009 at 11:08 am

Mmmm, those cheesecake oats sound good.

I actually have tried my oatmeal topped with a little bit of actual dessert cheesecake, and it’s really good! You only need to add a little bit of cheesecake since it’s so rich, but is it ever yummy! A nice treat, for sure.

31 Sarah (lovINmytummy) March 3, 2009 at 11:11 am

I’m not a big ricotta ran myself. It’s kinda dry and mealy, you know?

32 Anna Keller March 3, 2009 at 11:12 am

Even if you weren’t totally blown away by those oats, they look AMAZING! Your coffee also always looks out of this world. You’re making me really crave a big cup of joe right NOW.

33 Mom March 3, 2009 at 11:15 am

Hooray for the grandbears! Up and ready for school.

34 Natalie March 3, 2009 at 11:20 am

Cheesecake oats! Yum :) What could be better than that?

35 Ashley H March 3, 2009 at 11:31 am

Oh wow I dont even care that they didnt taste that great because they look amazing!!

36 seelee live (for the love of peanut butter) March 3, 2009 at 11:40 am

stinks these oats are not as good as they look. i was just copying it into my recipe ‘to make’ folder on my computer desktop, but then saw that they weren’t too yummy!
but, i am going to make them anyway and replace the ricotta with cottage cheese (since my family doesn’t buy ricotta regularly anyway). i’ll let you know how they are next week when i am home for break!

can’t wait for lunch!!

37 bobbi March 3, 2009 at 11:55 am

those oats look amazing I have never put ricotta in anything but lasagna. Oh and the bears too cute!

38 Kailey (SnackFace) March 3, 2009 at 11:57 am

You two and the bears— TOO cute!! Even if that wasn’t your fave combo for oats, they sound and look divine! I’ve only had ricotta in a savory setting, so I may be on the same boat with you for feeling iffy about them in oats. Pumped to see what the give away is!

39 Victoria March 3, 2009 at 12:01 pm

Wow. Those oats really look like a sundae.

40 Rose March 3, 2009 at 12:09 pm

That’s the prettiest bowl of oats!

41 Emily March 3, 2009 at 12:11 pm

Those oats are absolutely beautiful!

45 zestycook March 3, 2009 at 12:26 pm

Very funny day Kath! Great looking oats

46 Sarah (Tales of Expansion) March 3, 2009 at 12:33 pm

i agree that cottage cheese makes oats cheesier … but i love my ricotta, too!!

how is your house always so PERFECT? those bears are such a cheery sight :-)

47 sue March 3, 2009 at 12:36 pm

so fun seeing little peeks into your house- it’s always so cute!

48 Emily March 3, 2009 at 12:38 pm

Beautiful breakfast. Sometimes just starting your day with something pretty is a good way to put a good mood in motion.

49 Emily March 3, 2009 at 12:40 pm

Oohhh love the oats idea! Now I just need to find some strawberries…

50 Chelsea March 3, 2009 at 12:54 pm

Totally off topic, but your home looks beautiful!

51 Christina March 3, 2009 at 1:04 pm

your oatmeal concoctions are always so creative and look so pretty! I’m sure you’ve done it before but cream cheese oats are pretty awesome too for a cheesecake oatmeal.

52 Fancy March 3, 2009 at 2:00 pm

How fun to see another room in your house! I love the way it is decorated. I think a commenter once said something about how you should do a house tour—I would love that! Your house is beautiful! :)

53 Marianne March 3, 2009 at 2:12 pm

I’m with you on not liking ricotta in my oats. I tried it once, and it wasn’t for me. I have yet to try cottage cheese though.

54 Kath March 3, 2009 at 2:21 pm

Thanks for all the nice house comments. I do keep it very neat – it’s one part of chaos I can control in my life!

Brooke ,
I don’t like steel cut because the portion size is so small! They don’t bulk up and get creamy like rolled oats do. And I dont’ think they are as sweet. I like steel cut every now and then though.

ashley (sweet & natural),
OMG!! How did that kitty get back out! Talk about claustrophobia!

allison ,
I was going to say pizza sauce too. Or over stuffed shells or portabello mushrooms for mini pizzas.

55 Shelby March 3, 2009 at 3:32 pm

Those oats sound AMAZING! HOLY YUM!

56 AmandaD March 3, 2009 at 6:59 pm

I’ve never been a fan of oatmeal….until I ventured out of my comfort zone and made your classic whipped banana version. YUM! I am a huge fan of this breakfast now. I haven’t really experimented with many different ingredients, but have recently added ground flax and a sprinkle of coconut. :)
Here is my question-I really enjoy soy milk in my chai teas and lattes so I tried it in my oatmeal recently instead of my usual skim. However, my oatmeal seemed less creamy and the oats seemed more chewey. Why? What can I do with the soy milk to make a creamy oatmeal again?!

57 Michelle Hisae March 3, 2009 at 9:42 pm

Your oatmeal looks so pretty :)

58 Hadley March 4, 2009 at 7:27 pm

That’s a great idea to stir greek yogurt into the oats — I’m always looking for ways to add more protein to oatmeal. Do you ever stir in ground flaxseed for added fiber?
