Morning! Nearly Afternoon!

Matt’s flight was delayed by an hour last night, so we didn’t end up going to bed until 1AM. Consequently, we slept till 9AM.

I had been 3 weeks since Matt has had KERF oatmeal, so by special request I made a big pot

We incorporated some Great Harvest ingredients:

The end of a bag of Groovy Granola (which was incredibly crunchy!)

Huckleberry Preserves – with seeds! My fav

And a new kind of vanilla! It was a hint more marshmallow than usual – which you know I liked!

I also made the oats with leftover coconut milk, but sadly, I didn’t remember this until I started blogging so it wasn’t a noticeable difference.

The Mix

  • 1/3 cup muesli mix (leftover from Matt’s trip)
  • 3/4 cup water
  • 1/2 cup coconut milk (leftover – could barely detect it :( )
  • 1 tbsp chia seeds
  • 1 giant banana
  • Pinch salt
  • Sprinkle cinnamon
  • Groovy Granola
  • GH Preserves
  • Homemade crunchy peanut butter

Not sure what the day ahead holds, although I feel like we’ve just blown through the first half of it for sleeping so late and blogging taking up the better part of the pre-noon hours!

That vanilla sounds great! And I love preserves with seeds, but my bf doesn’t because they hurt his teeth! I think he has sensitive teeth though :)

2 Stacey (The Home-Cooked Vegan) January 30, 2011 at 11:23 am

Yum! Feel free to come to MY house and make oats for me anytime you wish 😉 Hehe. I didn’t wake up until 10:30 this morning! It’s almost noon and I’m still in my pj’s, which is a shame because it’s a beautiful day outside!

Hope you guys have a nice Sunday 😀

3 Emily January 30, 2011 at 11:26 am

Welcome back to KERFland Matt!! Glad you both celebrated with KERF oats :) Enjoy the day!

4 Kristen @ Kristen, Sweetly January 30, 2011 at 11:32 am

A big welcome home to Matt! Your fabulous breakfast spread looks like the perfect thing to come home to. :-)

5 Laura January 30, 2011 at 11:38 am

You’re oatmeals all sound so yummy. With one exception…that bananas….I’m assuming that they are used to add flavor and substance….but I’m allergic to the things :( Sad…cause I used to love them. Is there a way to substitute them with something else or is it cool to leave it out altogether??

6 KathEats January 30, 2011 at 11:39 am

Pumpkin or applesauce work well

7 Laura February 1, 2011 at 9:58 am

Thanks….now I will have to snag some of your recipies and try them out.

8 Gabriela @ Une Vie Saine January 30, 2011 at 11:39 am

I agree that coconut milk doesn’t make much of a difference in oats! If you really want a coconutty flavor though, I’ve made oats with 1/2 c water and 1/2 c coconut milk kefir. It’s sooo good.

9 Raya January 30, 2011 at 11:39 am

Marshmallow? I’m in!

10 rebecca lustig January 30, 2011 at 11:40 am

there’s nothing worse than stale/soft granola! (in my opinion)

11 kate January 30, 2011 at 11:41 am

Marshmallowy vanilla sounds incredibly good! Welcome back Matt!

12 jen @ taste life January 30, 2011 at 11:49 am

13 Natalia - a side of simple January 30, 2011 at 11:50 am

I can’t think of a better way for Matt to return to you than with a lazy Sunday morning and a hearty bowl of KERF oats. Oh, maybe an afternoon brew to top it off? I think so 😉

14 KathEats January 30, 2011 at 11:54 am

Haha. Indeed!

15 Matt January 30, 2011 at 12:39 pm

“Not sure what the day ahead holds, although I feel like we’ve just blown through the first half of it for sleeping so late and blogging taking up the better part of the pre-noon hours!”

After all you two have done the past few weeks, it’s okay to have a slow day! Put aside the to-do lists and daily agenda to enjoy a day of just being home and being together. You’ve both certainly earned it! I hope your day is filled with ‘Hey! Want to. . . ” and not “Hey, we need to…” :-)

23 KathEats January 30, 2011 at 12:31 pm

Thanks for the reminder :)

24 Kiran January 30, 2011 at 1:19 pm

Agreed with Nancy 110%.. And welcome home Matt :)

All your pictures really make me want it to be breakfast again!!! Those oats look fantastic 😀

46 lauren @ spiced plate January 30, 2011 at 1:56 pm

i love oatmeal for being so accepting of other flavors and foods. I actually love oatmeal for everything it is. We had it mixed with veggies the other night, and it was still delicious.
