I am excited to announce my newest blogging project: I will be writing weekly posts on any and all topics healthy living at BOCA’s Balanced Living group at Gather.com! I hope you’ll all follow me over
From what I’ve seen so far, Balanced Living looks like a great supportive community for discussing healthy living topics. Maybe we can coordinate some discussion boards or chats over there? Here’s my debut post, which just went up: Blog For A Balanced Brain.
Speaking of brains, mine still hurts
And I definitely feel a little worn down today. It could be the dreadfully cloudy day, or I could still be suffering from typhoid. As some of you have mentioned in the comments, fatigue and headache are common symptoms to the immunization. I’ll be using this lethargy to charge through a few school projects this afternoon. I think I’ll save my mullet cut for tomorrow.
I continued the Festival of Orange into Food Lab AND lunch!!
Our group was assigned carrots to cook in different ways –
We also examined cauliflower, broccoli, ONIONS (which smelled up the whole lab and made me nauseaous)
And apples. I only had one bite of these cooked apples. I couldn’t stand to think about eating veggies.
I used my freshly sharpened Piedmont Community College pencil my mom gave me from her school
My toast breakfast held me over well (except that I did have a few apple bites + water in lab) and I came home to a heat ‘n eat bowl lunch.
I mixed the last of my Nutty Vanilla Sweet Potato + Kale Soup with 1/2 cup leftover brown rice and about 1/4 a slab of tempeh. Mmmmm!
Plus a side of Kashi Honey Sesame, which I could have eaten a whole box of today –
After lunch I got an Aunt Mary Ellen Oatmeal Cookie out of the freezer and savored it in solitude (no cameras invited )

Hey, I was wondering if you could count your fat content for an entire day for 3 days. You have alot of peanut butter and cheese. Its not all healthy fats is it?

Damn those onions! My boss is eating a salad in his office with RED ONIONS probably the smelliest of all onions. Every time I go in the to file I have to hold my breath!

I love when you post your food lab pics or basically anything about school/becoming an RD because I’m going to start going to school for the same thing and have been waiting forever to start and still won’t be taking anything dealing with nutrition for a while- so it’s great to get a preview of what I have to come- it keeps me excited and looking forward to it!

I do have about a tbsp of nut butter a day and like olive oil and nuts, but I’m not sure I eat that much cheese? Counting fat for 3 days is a lot more time consuming than it sounds. You could probably do an pretty good estimate based on my blog photos if you want a number.
