We braved the elements this morning on a biking adventure. Kanz and I brought our bikes from home, and Matt came with us on Karen’s rented bike.
We biked all over the island for about an hour. There are so many nooks and crannies to explore!
When we returned we decided to stretch out with some power yoga with Dave Farmar – a 60 minute vinyasa podcast. We found the upper hallway of the inn to be the perfect studio spot.
Matt checked out after about 40 minutes, but Kanz and I held strong – literally! I love Dave’s style.
Then it was lunchtime!
I made a salad with mixed greens, carrots, tomatoes, leftover brussels sprouts. I drizzled it with Annie’s Balsamic dressing, which is probably the first bottled balsamic dressing I have ever liked (I am VERY picky about bottled salad dressings)
Plus a half sandwich – turkey, cheddar , tomatoes and jalapenos that Matt made me
And ripe pears
And a bite of Christmas cookie for dessert
[Sorry my photos were so dark – not sure why we ate without the lights on!]
READING TIME!

Your bike ride sounds so pleasant! And your salad looks fantastic!
Kath, I love your blog typically, but where are your helmets?
Guilty as charged. We always wear them in Charlotte, but there is not a soul here on the island (and no cars – only golf carts). Yes, I realize we could still fall off, but we were going leisurely and there aren’t hills, so we took a chance.
Nice pics as usual Jealous of your bike ride, Kath! Have a lovely day
I lurrrrve those white plates. I think food just looks SO elegant on white dinnerware.
Just munching on some ripe pears myself, so it was seemly to comment. I do like the tallness of your foldable bike. It’s so cute.
I can’t believe you only had one bite of Christmas cookie! Very impressive.
The bike ride looks fabulous.
I always giggle when I see fold up bikes like that!
Your biking adventure reminds me of my summer on Hilton Head Island. I was actually gonna say I like the lighting of your lunch photos!
i’m so jealous of your bike ride! Makes me wish it wasn’t snowy and icy here. Good job on the half a cookie. I always try to tell myself not to eat any cookies until after dinner. sometimes it works, sometimes it doesn’t
I love how you are being so active on your VACAY!!!!
Lunch looks delish!
What a relaxing gorgeous trip!!
How fun! I’d love to ride my bike around to explore an island! The salad looks great…Annie’s has a great shitaake mushroom salad dressing too!
Dave Farmar is a certified Baptiste Power Yoga teacher so you would probably like Baron Baptiste as well. I’m not sure if there are any certified Baptiste teachers in Charlotte but that might be worth looking into.
Biking is a great way to explore — I love visiting new cities and renting a bike for the day.
When I move permanently back to the US, buying a bike is a priority.
What beautiful biking scenery! Wish I was there!
What a great article you wrote on Gather! Just reading about doing good things made me feel good!
Thanks Kath!
You and your family seem so lovely, and it’s great to see you making the most of the Christmas holidays. I honestly consider you as such an inspiration in all aspects of life; you’re a beautiful, intelligent and fit young woman and I hope one day I too can be like that. I’m also a huge fan of exercise like yourself, but I’ve had the misfortune of battling an eating disorder since I was 16 (I’m now 21), and part of my illness is over-exercising without adequately fueling my body. However, I’m always constantly inspired and encouraged after reading your blog posts, you seem to remind me that exercise is for enjoyment not punishment, and that I can only achieve great results if I fuel my body properly. So thankyou for being you, you are wonderful. xxx
I agree! You’re such an inspiration! Thank you!
Thank you so much Victoria. Your comment means the world to me.
Isn’t biking so fun?! I love it, especially on such a pretty day
isn’t eating in darkness supposed to slow you down? did you find that that happened?
I’ve heard that, but I sped up because I was the last to sit down!
Looks like you are having a great time!
You’re biking adventure makes me want to pull mine out of storage – I don’t think biking in snow is a good idea though
beautiful scenery!
the sandwich looks perfect…i am not a fan of bottled salad dressings either! I do like Annies balsamic though
awesome bike ride! And I applaud you for sticking to just a BITE of cooke- i could never!
Lunch looks delicious! Just wondering- does everyone have breakfast and lunch together or is it a settle-it-yourself thing?
Breakfast is continental and we usually eat together around 8:30 or 9. For lunch we brought a bunch of lunch materials and eat together too.
So great that you got the boys to do yoga with you. I wonder if I could get my brother to do yoga with me?!
roasted brussels sprouts always make the best topping for salads
yum
That salad looks soooo goood!
Jenn
I totally agree that Dave has the best podcasts! I never get bored or check the time, even doing his 2 hour sessions!
Finding a place to do yoga in a hotel is always the hardest part. But looks like you had a good studio for after your ride.
Looks like a really fun day!!!!
I am so jealous of your amazing vacation! Reading, biking, good food, good company… Pretty perfect in my book!
I wish I was still on vacation.
Have you tried Newman’s Own Balsamic Vinaigrette? It’s my favorite. I don’t really like Annie’s that much though so maybe you wouldn’t like it. Jealous of your bike ride. Our bikes were stolen a couple months ago.
Biking sounds really nice! And I love y’all’s “yoga studio”
I am so in awe that your family is all into the healthy eating and healthy living. I love following your photo journal – you certainly are gifted.
I know it isn’t about numbers (ie calories), but I am wondering if you could share your stats on approx. how many calories you consume and the general proportion of macronutrients (fat, carb, protein).
Thanks.
Keep up the inspiring work!
Tanya,
I really have no idea how many calories I eat while on vacation or what my percentages are becase I don’t track calories in any kind of program. You can find more about my eating style on the Kath and Q+A pages.
Kath, I didn’t mean just while on vacation – I meant always – but perhaps it is better not to track anyhow. That is likely more “normal.”
By the way, SUPER job on your run (incredible) and my oh my you are creative in the kitchen!
