In the gym that is!

I finished packing! I was able to get everything comfortably in just a duffle bag and my NorthFace backpack, so I think I am going to carry everything on the plane. When I traveled throughout the UK for a week I survived with only a backpack, so this was a piece of cake! It requires wearing some articles of clothing twice and worst of all – having poor shoe fashion – but I will survive.

I was excited to get to the gym for one last hurrah this afternoon. In celebration of my travels, I did a little around the world:

I made my visit today a little longer because I decided to skip a trip tomorrow. My morning will be much more relaxed if I can just get up and enjoy my last few hours with Matt over oatmeal and coffee. We’ll depart for the airport around 11:30-12 for my 2pm flight.

Since I was at the gym, I wasn’t around for an afternoon snack and was quite famished when I made dinner at 7.

I present: Pimento Mac + Cheese

Ever since I had Kelsey’s Pimento Cheese I’ve been craving it big time! So since Veggie Mac was on the menu tonight as an easy last-minute meal, I turned it into Pimento by adding…pimentos! And some aged white cheddar on top. SO DELICIOUS!

This was Annie’s Mac + Cheese we bought in bulk from Costco. It’s not whole wheat, but it is cheap! I had a 1 cup portion and a mixture of sauteed fresh peppers + broccoli + frozen okra on the side. I usually mix my veggies in with the mac, but tonight I preferred them on the side. I think I like them better this way.

That red topping? Sriracha. LOVE this stuff. It’s super spicy and garlicky. Not the best for breath, but it sure adds a kick.

good job on not over packing! i love it when i don’t have to check in any luggage. it makes me very comfortable knowing that all my stuff is within arms reach and there’s no chance i’ll reach my destination and have no luggage. if only that liquid ban was lifted…(sometimes for slightly longer trips, this makes packing for the plane hard)

if poor shoe fashion is your biggest problem, you’ve got it made ;-)

Wow, I’m impressed with you getting all your stuff into just a couple small bags! It’ll save on the extra charges for baggage! :)

you should double check carry-on limits for amsterdam. last year i flew from nyc to india via london heathrow and checked my bag all the way through. no prob. HOWEVER, i had northface backpack and then my laptop in its laptop case. the uk airport requirements make you go through security again even though you’re only in transit to catch another flight. and their carry-on limit is ONE BAG. not one bag + a personal item. i had a hell of a time trying to cram my laptop case into my small backpack for the 10 steps thru security. otherwise they threatened to make me leave behind my backpack or laptop or who knows what. long story short, go make sure amsterdam will let you carry-on a duffle + backpack. no harm in putting the duffle in checked. (and you won’t be charged in north carolina when you show them your tickets and say you want it checked to your final international destination).

AH you must be so excited! I just love love traveling. Can’t wait to hear about your adventures!

I too love Sriracha and put it in everything…it’s great in soups. I think so far on my blog I’ve put Sriracha in 50% of my recipes! And to think I’d never heard of it until I met my boyfriend two and a half years ago…guess he’s good for something ;-)

You are CRAAAAAZY with that Sriracha. I can use only about 1 drop on my food before my mouth is on FEYE-UH!

It’s nice to see how you are able to put working out in perspective and be able to choose spending time with Matt over the gym. Sometimes it’s hard to realize you DO have a choice and one workout isn’t the entire world! Thanks for the reminder :)

From what I’ve been told, it’s not very safe to go off by yourself, so I don’t plan to do any runs or walks while I’m there. Hopefully I can get some exercise plucking tea!
