There’s really nothing like a sweaty workout. I was feeling extremely blah this morning from 2 days of wine and overeating and left the gym practically glowing with refreshment. (A nice shower and bowl of oats helped too :) ) I drank about 48 oz of water (2 bottles) while there – perhaps that’s why!? I climbed stairs for 45 minutes and then did some lunges and ab work.

Continuing my culinary tour of oatmeal variations, I made Sunny Side Oats for Anna today. She smothered hers in hot sauce – I sweetened mine with maple ;) She proclaims that her favorite combo was the first day with Coconut + Banana + Almond Butter – because it just blew her away from the start. I hope I converted her to stove-top oats!

The mix:

  • 1/2 cup oats, vanilla soy milk, water, pinch salt
  • 2 tbsp wheatberries
  • 2 tbsp cottage cheese
  • An egg, cooked on the side in a skillet with cooking spray
  • Shredded Parrano cheese (like parmesan)
  • 1 tsp maple syrup

I’m headed to Chemistry but I am coming back between lab to take Anna to the airport :cry: I’m not sure when and where I’ll eat lunch so I may have to save blogging for 5pm when I get back from lab :evil: .

SO sad that Anna’s leaving – we’ve had so much fun!

But I’m also SO excited Thanksgiving break is just around the corner!

I love me some savory oats. So sad to hear that Anna is leaving, she must have had quite the trip with all your goodies! ESPECIALLY breakfasts!

I agree with Anna, you can’t get much better than coconut, banana and nut butter!

If you haven’t convinced Anna that stove top is best you have me. I tried it this morning and loved it. I was also a lot quieter than the microwave, and I made enough for the whole week. I made it a little bit more runny because I’ll be tossing it into the microwave to re-heat. I’m too lazy to wash out a pot every morning. But at least it was originally prepared on the stove top…well see how it re-heats.

I had oatmeal and eggs this morning too, but I added pumpkin to my oatmeal so I kept my eggs on the side.

Awww I’m totally gonna miss Anna too! Oh and I’ve been meaning to ask you — Well, actually, I was originally just going to SURPRISE you and the hubcap and just show up, but I didn’t want to make you lose your Oatmeal or anything… BUT, when can I check into the Kerf Happy Spa? Like… If I show up tomorrow would you be weirded out at all? And by “weirded out” I mean would you… umm… call the cops on me or call it good :)

I won’t lie…I am a bit scared to try these egg oats!! Anyone else? lol. I just don’t know if I’d like it. I will try and work my courage up someday :) Has anyone tried them and not liked the combo?

Oh She Glow– i was hesitant to try eggs w/my oats too b/c i always associate sweet w/my oats, but i tried kath’s combo (i used feta instead) and it was AWESOME!!! You MUST try them!

btw, kath– how do you make your steel cut oats?? I bought some for the first time & i think the way to make them is supposed to be different than old fashioned oats, right??
oh, AND i recently bought pumpkin butter from trader joe’s and it is AMAZING!!

Kath! I made oats on the stovetop today! I usually microwave even traditional oats, but it doesn’t work as well with soy milk which is what I am using now so I moved over to the stove…and since I was doing that, I tried your banana method… I think maybe my banana was too big though because there was a very distinct “overripe banana” taste to the bowl – which was fine bc I added cin and PB…but is that taste supposed to be there or should I use less banana? Thanks!

Hello Kath, I wanted to thank you for having such a great blog and sharing parts of your daily life with us!

I have a question for anybody though.

WOULD ANYONE WANT TO DO A SMALL BAR TRADE?? I have three Lemon Vanilla Cashew Clif Nectar Bars that I don’t care for the taste anymore (pretty burnt out on them because I bought boxes of them). Just let me know. Thanks!
