Hi Kath!

I found your website recently (google reader suggested it!) and love reading through all your recipes. This morning, in fact, I tried out the oatmeal pancakes and LOVED them. Anything with a mashed-up banana sounds good to me. I also threw in some pecans and a little pumpkin butter to make it festive for fall! Anyway, as a fellow grad student who is trying to live healthfully in addition to staying on top of ever increasing course loads, I love reading your blog and getting new food ideas.

Thanks so much for such a refreshing point of view!!

I love pancakes, and will have to try this recipe!! SO LIGHT!
Anyway, I was reading few days ago about 'How to store leftover egg yolks and leftover egg whites'. We can actually freeze them and just put them to defrost on room temperature before using them. Here is the link on how to do it.

my hubby and i love your oatmeal pancakes - we only have rolled oats in our home too so that's what we've been using....it did turn out super watery (still delish though) so i will try your soaking overnight method next time.

Mmmm love oatmeal pancakes! I used to make those all the time too. I especially like them with yogurt or pumpkin mixed in :-)

I have not tried a flax method, but my guess would be that it wouldn't work all that well. There's something magical about egg whites that keeps them from sticking.

That looks great! We tried whole wheat pancakes this morning with banana and walnuts, but I think I would rather the oatmeal pancake.

In our house my son would just make unhealthy key lime pie with those yolks!

I wonder how they would do with a flax egg substituted for the egg whites..have you tried this?

I agree with Maggie (although I didn't do the math). I know it's kind of sad on one level to throw out the yolks, but it's really so much cheaper than carton whites, and I guess it feels more "natural" to me to buy whole eggs and discard the yolk. The fact that for some reason they affect the consistency of the pancakes though, is kind of a bummer. Nice to see you bring back an old fave!
