Oh yeaaaaahhhh!!
I was planning to go to a prenatal yoga class tonight, but my computer and I got in a fight and I just wasn’t in the mood come 5:30. So instead Matt and I went on a gorgeous evening walk down our favorite street. It was just as relaxing!
Pre-walk snack – yogurt, strawberry jam and granola
When we got home, we put dinner into the oven. I couldn’t wait to have a big tofu roast!
Twin Oaks Tofu and potatoes went in (coated in EVOO and herbs and salt) at 400* for about 45 minutes
And potatoes and zucchini went in second round with about 20 minutes to go
Topped with greek yogurt and ketchup, this dinner was the best thing I’ve eaten all week!! I had no trouble calling this dinner delicious.
That is until Ellen showed up with this gorgeous dozen of mini cupcakes from our local sweet shop, Sweet Haus!
The three of us did a taste test of all the flavors. This was great buttercream! My favs were the strawberry, pistachio (which surprised me!) and Oreo : )
And now I’m off to enjoy the baby cupcake happy kicks! I actually made a video of my stomach moving around last night – crazy movements! It’s a little too personal to blog since I’m lying in bed in my PJs, but I’ll do one that’s more public-appropriate in time!

Ummm. You have awesome friends that show up with cupcakes…how do I get some of those?
Normally all your food looks sooooo good but tonight not so much. 38 weeks preggers and nausea.
I hope it looks better tomorrow lol. Oh, can’t wait to see that baby moving I love those kinds of videos. Don’t lose them as they are great keepsakes.

LOVED watching the belly rolls, that was one of the best parts of pregnancy!

Those cupcakes are absolutely adorable! With the day I’m having, I feel like I’d pop them all into my mouth!! Thankfully I have some frozen yogurt in my freezer that has given me the sweet ending I needed!

That meal looks perfectly. You guy cut it into the perfect squares so it looks so photogenic. My veggie’s would be jagged, thrown in a bowl and dolloped in ketchup!

I’m trying to eat less meat, but I still haven’t learned to like tofu! Do you have advice on how to introduce it into my diet?

I’d shop around with the different brands. The Twin Oaks we have here is local and non-GMO and it’s thick and very hearty – I like it more than the mushy kinds I used to buy

Roasted potatoes, tofu and veggies…yummy! The ‘icing on the cake’ has to be those mini cupcakes! How fun! Adding a little homemade strawberry jam to vanilla icing is delish…looks pretty too!

Yum! I got some Twin Oaks tofu at the Harrisonburg Co-op and don’t think I’ll buy another kind! I haven’t even been cooking it, but throw it in with some steamed veggies for my late-night snack/second dinner at work. It looks delicious with the roasted vegetables though!
