All’s Sweet That Ends Sweet

May 17, 2012

Oh yeaaaaahhhh!!

I was planning to go to a prenatal yoga class tonight, but my computer and I got in a fight and I just wasn’t in the mood come 5:30. So instead Matt and I went on a gorgeous evening walk down our favorite street. It was just as relaxing!

Pre-walk snack – yogurt, strawberry jam and granola

When we got home, we put dinner into the oven. I couldn’t wait to have a big tofu roast!

Twin Oaks Tofu and potatoes went in (coated in EVOO and herbs and salt) at 400* for about 45 minutes

And potatoes and zucchini went in second round with about 20 minutes to go

Topped with greek yogurt and ketchup, this dinner was the best thing I’ve eaten all week!! I had no trouble calling this dinner delicious.

That is until Ellen showed up with this gorgeous dozen of mini cupcakes from our local sweet shop, Sweet Haus!

The three of us did a taste test of all the flavors. This was great buttercream! My favs were the strawberry, pistachio (which surprised me!) and Oreo : )

And now I’m off to enjoy the baby cupcake happy kicks! I actually made a video of my stomach moving around last night – crazy movements! It’s a little too personal to blog since I’m lying in bed in my PJs, but I’ll do one that’s more public-appropriate in time!

Normally all your food looks sooooo good but tonight not so much. 38 weeks preggers and nausea. :( I hope it looks better tomorrow lol. Oh, can’t wait to see that baby moving I love those kinds of videos. Don’t lose them as they are great keepsakes. :)

9 kristen @ verbs and vignettes May 17, 2012 at 8:42 pm

I love mini-cupcakes so you can taste multiple flavors…Oreo, yum!! I notice the baby kicks more after I eat sugary things, have you noticed that yet?

13 KathEats May 17, 2012 at 8:59 pm

It seems he kicks after all meals :)

14 Amanda @flecksofgreen May 17, 2012 at 8:55 pm

15 Lindsay @ Fuel My Family May 17, 2012 at 8:58 pm

LOVED watching the belly rolls, that was one of the best parts of pregnancy!

16 Kerry @ Totes My Oats May 17, 2012 at 9:03 pm

Gah! Those cupcakes!! I want them right now.

And that dinner does look delicious – and I just so happen to have all the ingredients to make them same! :)

20 Jacqueline May 17, 2012 at 9:35 pm

Those cupcakes are absolutely adorable! With the day I’m having, I feel like I’d pop them all into my mouth!! Thankfully I have some frozen yogurt in my freezer that has given me the sweet ending I needed!

21 Katie @ Talk Less, Say More May 17, 2012 at 9:36 pm

Those cupcakes looks AMAZING!

22 Jen May 17, 2012 at 9:41 pm

That meal looks perfectly. You guy cut it into the perfect squares so it looks so photogenic. My veggie’s would be jagged, thrown in a bowl and dolloped in ketchup!

23 Heather @ Fit Mama Real Food May 17, 2012 at 9:55 pm

Now that’s a sweet treat! They look so yummy. Enjoy all the kicks girl :)

24 vegtastic May 17, 2012 at 10:20 pm

You say potatoes, I say tomatoes 😉

25 Annette @FitnessPerks May 17, 2012 at 10:48 pm

Those look like amazing cupcakes! I totally make dinners like that all the time–just top it off with GY and ketchup and we’re good to go 😉

26 Averie @ Averie Cooks May 17, 2012 at 11:11 pm

Glad you had a delicious dinner (best of the week)…well-deserved after a fight with the computer. I HATE those!

27 Kelsey May 18, 2012 at 12:06 am

I’m trying to eat less meat, but I still haven’t learned to like tofu! Do you have advice on how to introduce it into my diet?

And the cupcakes are precious:)

28 KathEats May 18, 2012 at 7:57 am

I’d shop around with the different brands. The Twin Oaks we have here is local and non-GMO and it’s thick and very hearty – I like it more than the mushy kinds I used to buy

29 Khushboo May 18, 2012 at 12:21 am

Now that’s what you call a good friend- those cupcakes look great!

30 j3nn May 18, 2012 at 12:28 am

32 Simply Life May 18, 2012 at 5:36 am

That granola looks SO good!

33 Susan H. @ The Food Allergy Chronicles May 18, 2012 at 6:08 am

Roasted potatoes, tofu and veggies…yummy! The ‘icing on the cake’ has to be those mini cupcakes! How fun! Adding a little homemade strawberry jam to vanilla icing is delish…looks pretty too!

34 Molly @ RDexposed May 18, 2012 at 6:28 am

I had to do an evening walk after I became aggrivated as well. Perfect rx!

35 Angel7 May 18, 2012 at 6:28 am

Your dinner looks really good to me right now, even though it is early in the morn. :)

36 Hillary May 18, 2012 at 6:59 am

Those cupcakes look heavenly. I’ve never even thought to make something like strawberry pistachio—hmmm…!

37 Hillary May 18, 2012 at 7:00 am

Right, I’m an idiot. You said strawberry and pistachio as two different flavors, not one. Whoops!

38 Hope @ With A Side Of Hope May 18, 2012 at 7:03 am

Cupcakes are my weakness! :) I love them with a passion. Those look great!

39 Chelsea @ One Healthy Munchkin May 18, 2012 at 7:10 am

42 Stephanie @ My Freckled Life May 18, 2012 at 8:38 am

Yummm, this dinner AND dessert look so delicious! And pistacio cupcakes? I’ve never heard of such a thing! Sure sounds interesting!!

43 Anna May 18, 2012 at 9:02 am

Yum! I got some Twin Oaks tofu at the Harrisonburg Co-op and don’t think I’ll buy another kind! I haven’t even been cooking it, but throw it in with some steamed veggies for my late-night snack/second dinner at work. It looks delicious with the roasted vegetables though!

44 cassie May 18, 2012 at 12:05 pm

Hi Kath! I’ve been following you’re blog for awhile, and decided to finally make one of mine. Love the cupcakes-The oreo would have been the first one I attacked ;). The Tofu/potatoes looks delicious…I might recreate that this week!
