Victoria and I did waaaaay too much talking today and barely any studying! D’oh!! We realized afterwards we should have been out walking instead of sipping coffee but it was fun to chat. I had a Caramel Vanilla Cafe au Lait when I got there at 3:30
At 4:30 we decided to head over to the gym and were undecided if we’d go to Sculpt class or not. I started with 26 minutes on the Stepmill (a different kind than I’m used to that I think I did at a slower pace) followed by another 15 or so on the ET. Then we decided we would go to Sculpt after I brought up the fact that I told you guys I would be going! It was a 50 minute weight lifting class. I really liked the pace – it wasn’t one of those “kill your muscles” types where you can’t lift anything afterwards but was a little easier, which I liked. Not sure if I’ll go back anytime soon, but I will probably be feeling it tomorrow in my gluts! And I did 50+ REAL push-ups, so maybe my arms will be sore too? I’m planning to get up and just do easy ET tomorrow before my full day of classes.
I had planned on having a LaraBar around 4, but the coffee filled me up, so by 7pm when I was home and showered, I was quite hungry! On the menu: omelets.
I made quite a good one, if I do say so myself! The last time we had these Matt was in charge and they turned into a scramble. Omelets were probably one of the first things I learned to cook when I was little (stuffed with American cheese!) so I was in charge tonight. I sauteed about half a cup of diced mixed peppers, took those out and added two eggs. I tilted the skillet while lifting the sides with a spatula to let the egg go underneath. Then added ~1/3-1/2 cup shredded cheese (I wanted to TASTE the cheese tonight and I did!!). Fold over and let it glue together. Mmmm!
I also had a small slice of our latest bread: Cinnamon Raisin. With a dab of real butter.
Along with a side spinach salad complete with peppers, carrots, strawberries, balsamic and feta

Some nights, “breakfast” for dinner is all I crave. Mnnn, cheese + egg is a combo that never gets old! My omelets always turn into scrambles as well.
