A Little Of Everything

After a few nice hours reading, I got up to put dinner in the oven. And had a hunk of bread in the process :)

The husband walked in the door just in time to feed me a bite of this hot jalapeno cheesey bread he baked today :) So delicious, but it didn’t go with dinner so I’m saving it for lunch tomorrow along with leftover chili!

Tonight’s dinner was a mix of favorites put together into a delicious bowl:

I baked some sweet potato and a cup of fresh cranberries in the oven at 375* for 30 minutes tossed in maple syrup, cooking spray and some kosher salt.

And tossed those with some simmered wheatberries (’bout half a cup), leftover shredded chicken (’bout 1/4 a cup) and walnuts (’bout 5 halves each) to make a warm salad –

The cranberries were superb roasted this way –

We also debuted the newest homebrew: Maple Brown Squirr-ale!! It is slightly undercarbonated, but the flavor is spot-on. We’ll be serving it to the family over Christmas :) I had 1/3 of the bottle -

The conversation was flowing so I hopped up to get us another beer – this time the Dogfish Punkin Ale, which the husband thinks is the best pumpkin ale ever, but I still think Cottonwood (our local brewery’s) beats it hands down. I had 1/3 of this one as well.

And to top it all off, the hub brought home this surplus bag ‘o oatmeal raisin cookies! They are GIANT!!

I had 1/4 of one – smothered with some frozen/thawed ganache leftover from my birthday!

For some reason I’m awfully tired tonight, so I’m going to red in bed. But maybe just one more episode of Arrested Development first :)

mmmmm.. Love the roasted sweet potatoes and cranberries! What a great combo!

Would love to try this tomorrow! Did you just use one whole diced sweet potato and then drizzled the potato/cranberry mixture with the maple?

It was 2 small sweet potatoes, about a pound’s worth. And 1 cup of cranberries and probably 2 tbsp maple.

Kath- I tried butterscotch chips in my oats this morning…and when I saw that you only used 1/2 TBSP i was a little apprehensive that I would need more. When I tasted one by itself, I was surprised by how strong the flavor comes out, and you only truly need about 10 chips tops! Thanks for such a wonderful idea, they tasted DIVINE!
