Island Bean Salad
Island Bean Salad (serves 2)
- 1 can black beans, drained and rinsed
- 1 can pineapple chunks in pineapple juice, drained with 2 tbsp juice reserved
- 1 kiwi, diced
- 1/4 bag broccoli slaw
- 1/2 a green pepper, diced
- 1 tsp Dijon mustard
- 1 tbsp Apple cider vinegar
- 2 tsp Honey
- Juice of 1 lime
- Pinch Red pepper flakes
- Pinch salt
- 1 tbsp pumpkin seeds
- 1 tbsp coconut
Mix black beans through green pepper together. Make a dressing by combing mustard through salt in a jar and pour over salad. Garnish with pumpkin seeds and coconut.
Each serving is a very rough 350 calories.
Delicious Variations + Additions:
- Avocado
- Toasted almonds
- Sunflower seeds
- Mango (or any tropical fruit!)
- Orange juice
- Shredded carrots instead of broccoli slaw
- Scoop of cottage cheese
- Crackers!

Wow! What a wonderful salad, this is the first recipe of yours that we’ve tried and I can’t wait to try some more!
Made this today and it was great! We threw a little bit of horse-radish in it to spice up the sweet even more. Thanks for helping me toward my quest for healthy eating!
