This was not my best breakfast ever – lots of logistics went awry! The previously frozen pumpkin didn’t really stir in well enough to the ‘cake batter and I made quite a mess in the kitchen trying to think of something celebratory to do for breakfast!! I feel so disorganized today!
My Pumpkin Oh cake has gotten too dry to be delicious, but the icing was still good! So I plopped the icing into a piping bag and attempted to re-purpose it onto my pancakes. Unfortunately it was ice cold and too low in volume to really get a good pipe. But it still worked!
Despite the bumps in the road, these pancakes TASTED AMAZING!! Topped with tons of Biscoff spread (is there a better flavor on the earth?), pan-seared bananas, and cream cheese frosting, they were plump and doughy and oh-so-good with an episode of House Hunters.
I’m sad that Matt is really busy today and couldn’t stay home with me, but we’re meeting up in a bit for a mid-morning hike and lunch date and continuing the festivities with a fun dinner out tonight.
