KERF + BERF are blending into one! After an afternoon of writing, it’s hard not to start my KERF posts with my weeks of pregnancy : )
Usually the food is a giveaway which blog I’m writing for : ) This was a banana, milk, yogurt and peanut butter smoothie topped with Oh’s!
This evening Hillary brought over dinner and a movie! Just like the ole LOST days. Matt and I helped assemble these great tostadas!
Layers of crunchy tostada chips with refried beans, chicken seasoned with taco sauce, melty cheese and jalapenos.
Baked at 350* for 15 minutes!
We ate them with a knife and fork, and they were delicious!
Matt made an avocado crema with 1 avocado, about 1/3 cup greek yogurt, Southwest seasoning, lemon juice and salt. This was SO GOOD – the best of quac and sour cream in one! Served over a “salad.”
Over dinner we watched “No Woman No Cry,” a documentary by Every Mother Counts and Christy Turlington Burns. The film follows the stories of high-risk pregnancies in other parts of the world – where hospital care is scarce. I will have a post on BERF about it soon – it was a good eye-opening film.
When Hillary offers to bring dinner, I make sure our fridge is stocked with her favorite – Jeni’s Ice Cream!!! Salted Caramel is always EVEN BETTER than I remember!! It should totally be renamed “Toasted Marshmallow” because it’s 100% roasty sugary good.
Nite!

Jeni’s Ice Cream is on my next grocery list. I hope it’s worth the splurge!!
Start with Salted Caramel – it is the bestttt!! (Although I’ve only had one other flavor because i keep going back to it
)
And just remind yourself that a scoop at Ben & Jerry’s is $4.30!
I finally bought this last week after reading about it here for a while – WOW! It really is that good. I actually hid it in the back of my freezer because my husband wouldn’t know the difference, and I will make it last a good six weeks
In the fall, Jeni’s makes a Sweet Potato with Torched Marshmallow flavor. So good! Like pumpkin ice cream but fancier. This reminds me I need to see if I can still find Savannah Buttermint in the scoop shops as well as the White House Cherry.
Omgggggggggggggggggg i must find that flavor!!!
WOW, that sounds like the perfect meal to me–Mexican inspired and ice cream. YummyY
Happy 24 weeks to YOU!
I thought you were making this a BERF-ish post because you ate melted salted caramel on tostadas—the start of a salty sweet preg craving. Ha!
I can’t wait to hear your review of that documentary! I’ve heard of it before, I’d love to hear what you think of it!
crazy documentary. woman and child health and nutrition is a serious issue on a global level.
We do the “avocado crema” from time to time, too! It spreads so nicely and you can get more on your fork.
Do you mix it by hand or in a stand mixer/blender?
Actually we just mix by hand plain yogurt and avocado. Whip it GOOD!
If you are ever in the neck of the woods of NYC…. go to Pure Food & Wine and have their salted carmel chocolate tart thing. It is SOOO good!
That avocado crema looks divine–creamy goodness!!!
Jeni’s Salted Caramel icecream… Great way to end a dinner

Plain avocado is something we just can’t warm up to at our house. But served like that with Southwest seasoning added to it might just do the trick!
man, that looks delicious. avocado in any form is ok by me.
and “salted caramel!” i’m trying to come up with salted caramel popsicles for the summer. i don’t think i could go wrong.
Hey Kath! What proportions did you use in your pb banana smoothie?? I’d like to make it!
Cup of milk, half big banana, 1/4 cup yogurt, 4 ice cubes, 1 tbsp pb
That ice cream just makes my mouth water – YUM!
Mmm…avocado crema. I love avocado ‘sauce’ mixed with zucchini noodles for a pasta dish. So good! And I’m hurting for that Salted Caramel ice cream–I may just have to break down and have it shipped to me.
I dont even like ice cream (give me cookies or brownies!) but THAT ice cream sounds fab.
And the guac + sour cream combo, can’t go wrong there!
I need that ice cream in my life…ASAP!
The avocado “dressing” looks delicious!
That ice cream sounds delicious. Your whole dinner sounds delicious. I think I am going to change my dinner plans. I love me some Tex Mex.
Smoothies with a crunch…yum! For a while these were a regular occurrence in my photos but I can’t remember the last time I had one. That needs to change!
I’m heard about that film- will be interested to hear your thoughts about it!
Those tostadas look amazing! I’ve never had an avocado crema before but it looks like I’m missing out! Definitely need to try it
Jeni’s ice cream looks divine…I just want to dive into the bowl!
I love the looks of that avocado crema! It’ll make the perfect topper for my tacos on Wednesday night!
By this post title, I was about to get totally grossed out by your pregnancy cravings. And then I realized that these are all foods I crave too (but not together!)
I am totally in love with Jenni’s ice creams as well! She has another great flavor too: sweet potato with torched marshmallow. Not sure if it’s available where you are but I think you might really enjoy it!!
Oooh… avocado crema- that sounds great! I’m obsessed with Ashley’s (edible perspective) black bean crema – have you made that? (I’m sure you have- I was really late to the party on that one!).
Those tostadas look AMAZING! Your blog always leaves me with food envy
I am going to OHIO this summer to meet my husbands family for the first time…Jenis is in his hometown….SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO I know where I am going
My twin sister was flown to NYC by Christy Turlington to do an interview for the NWNC film. Her piece didn’t make the cut but she said Christy was very nice and she loved the chance to tell her story. She was interviewed due to her experience nursing a friend’s baby (my sis was nursing her son at the time as well) because her friend had passed away during childbirth. It’s heartwrenching but we are so proud of her!
Oh man, so sad. That would have been a good addition to the US side of the story
I’m pretty sure guac is spelled with a G not a Q. Just sayin.’
Yeah, I can’t get those letters right in my brain
That documentary was very good (and intimidating)! I’m glad you caught it.
My life is incomplete without that ice cream </3
Okay maybe not, but still
I talked about your avocado crema in my blog post today, I noticed you had some more on vacation last week. It’s my new favorite way to eat avocado! I think I like it even better than guacamole! Just something about the tang from the yogurt I think. Thanks so much!
