Hey guys! Just got home from work! I got there this morning and we caught up with a meeting and then hit the road for a meeting at EarthFare. We may be doing some nutrition seminars soon!
After the meeting we figured we’d just eat lunch there with the tempting salad bar in view and the clock chiming 12:30
I had my usual giant bowl of salad!! The bottom was all mixed greens and raw veggies and the top included a stuffed grape leaf, kale salad, sun-dried tomatoes, butternut squash salad, garbanzos, blue cheese, 4 olives, 2 pasta salads, mushroom + walnut salad and watermelon + pineapple.
I was just barely full upon finishing this!! My stomach is seriously a 10 gallon holding bin today.
We wanted a little something sweet after lunch so we each got a little bag of ginger snaps. Matt asked me the other day why Mary hadn’t been on KERF yet – here she is!!
Dietitians can’t go to a grocery store without buying 2 tubs of nut butter and organic red wine
I worked all afternoon on a few meal plans for clients!! Figuring out caloric needs, grams and percentages of CHO, PRO and FAT, food group exchanges, and food ideas based on likes/dislikes. I only finished 1.5 and it was exhausting!! Would have been much easier if I could just write a healthy meal plan from my own instincts and balances. But then again, I’m sure I’d have gaps, so it’s a great guideline.
I came home ravenous!! I’ve been trying to eat up some of the bars in our house and had packed one, but when I’m hungry I want more voluminous foods – fruit, cereal, milk.
I had blueberries, banana, cereal, and delicious milk. It’s been a while since we’ve had regular organic cow’s milk (due to cost, not principles) and boy is it good!
Still hungry….seconds….
We’re making dinner right now because we have an INTERVIEW for our future bakery at 6PM! Our bean salad will be all ready to eat after it’s over.

I’m glad to see you have “hungry days” too! I don’t get them very often (usually around my period) but I was like that yesterday… kept on eating and eating… and was full/sick until about 2 when I made myself eat lunch.
I wish I had an Earth Fare by me – your salads evoke such feelings of jealousy

that is the BEST peanut butter I have ever had!! I will admit, I prefer my peanut butter sweetened, so getting the fresh ground honey roasted peanuts is DEE-LISH!
that wine is pretty darn good, too. ESPECIALLY for organic (which = no headache) and under $9.

Salad looks fantastic, I want chickpeas now! Any comments on canned chickpeas vs cooked from scratch? Is there a better nutritive value, or should I just get out the can opener? Hummus, yum!!

I can’t resist Earthfare! Does yours have free samples at every turn like mine? I picked up some of that same nut butter today. It was a really good deal to buy it from them! Just $5 a lb as opposed to $11.69 for a lb of the natural almond butter by Maranatha.
Ugh, I remember when I did my meal plans for clients last semester and my teacher always said “Stacey, this is how YOU eat! Not everyone is as healthy!” (She said it in a nice way of course) but I would have to sit and redo them and it would take me all day to figure out what goes with what…I’m feelin your pain sista!

i always get my rotten nanners among other produce at HT too, today’s find was a big ol’ 77c spaghetti squash! sometimes if there aren’t any out and you ask the produce ppl if they have any, they’ll look at the banana’s grab a bunch, and mark them down for you anway!
That salad looked awesome!! I wish we had a place like that here…but unfortunately in the town I live in, salad is an afterthought….and salad bars rarely include more than soggy lettuce and a few veggies.
I also really love your skirt. I’ve been looking for one almost exactly like that for months!! Pleeeease tell me where you got it

Always jealous of the Earth Fare salad bars when I see them! Hopefully Whole Foods will be open soon – still 20 minutes away but worth the trip!

I would bet that your hunger may be a result of all of your crazy hard work lately! You’re internship sounds like its going wonderfully and I am sure they are so happy to have you there. I am not affiliated with them, but the website vitacost.com has good prices on chia seeds. Personally I like them mixed with yogurt – it makes it extra thick and delicious!
